This is a sweet stewed pumpkin dish which is not soggy.
The ingredients are pumpkin, sugar, and soy sauce.
Select a pumpkin with a deep yellow at the cut end. Such a pumpkin is well ripened and will taste sweet.Remove all the seeds and inedible parts by hand
If there is a hard part or a bruise on the rind, cut that part away with a kitchen knife.Cut the pumpkin into pieces about 4cm in size.A slightly big cut piece will not taste soggy when finished.
Put the pumpkin into a pot with the rind facing downwards.
This way, the hard rind will become nice and soft.
Pour in water until the pumpkin almost covered by it. The part around pumpkin flesh will be easy to get heated, so there is no problem with not totally immersing it in water.
Cook it over a medium fire, and skim the scum after it boils.Add sugar and soy sauce, cover the pot with aluminum foil, and boil it for about 8 minutes or until pumpkin becomes soft.
