Chicken Bacon and Spinach Alfredo Stuffed Shells
Ingredients:
Chicken Breast
Bacon
Spinach
Shallot
Minced Garlic
Jumbo Shells
Butter
Cream Cheese
Heavy Whipping Cream
Mozzarella Cheese
Colby and Monterrey Jack Cheese
Salt
Black Pepper
Garlic Powder
Onion Powder
Cayenne Powder
Smoked Paprika
Chili Powder
Italian Seasoning
Directions:
1. Cube 2 chicken breast.
2. Dice 1 shallot.
3. Season chicken to taste with salt, black pepper, garlic powder, onion powder, cayenne pepper, smoked paprika, chili powder, and Italian seasoning.
4. Boil jumbo shells according to the directions on the package.
5. In a skillet add about 2 tablespoons of olive oil.
6. Add bacon to the skillet and cook until crispy.
7. Remove the bacon from the skillet.
8. In the same skillet cook the chicken for 2-3 minutes on each side or until fully cooked.
9. Remove chicken from the skillet.
10. In the same skillet, add 2 cups of spinach and allow it to cook down for 3-4 minutes.
11. Add shallots and a tablespoon of minced garlic to the spinach. Cook for 2-3 minutes.
12. In a separate skillet, add 2 tablespoons of butter.
13. Once the butter melts, add 1 cup of heavy whipping cream and allow to simmer for 5 minutes.
14. Season Alfredo sauce to taste with salt, black pepper, garlic powder, and onion powder.
15. Turn off the heat and add 1/2 cup of mozzarella cheese. Mix until the cheese melts.
16. Chop bacon into bits.
17. In a bowl mix together the chicken and spinach.
18. Add 8oz of cream cheese. Mix until combined.
19. Add 1/2 cup of mozzarella cheese and 1/2 cup of colby and monterrey jack cheese.
20. Coat the bottom of the pan with alfredo sauce.
21. Add about a tablespoon of chicken and spinach the shells with chicken and spinach mixture.
22. Add the stuffed shells to the pan.
23. Top shells with bacon, alfredo sauce, mozzarella cheese, colby and monterrey jack cheese, and more bacon.
24. Bake 350 degrees for 10-15 minutes.
