Hello everyone, here's the list of ingredients along with the steps to make shaiyah:
Regular green chili peppers sauce:
Ingredients:
- lamb
- one chopped onion
- one spoonful of salt
- ground coriander
- ground pepper
- one spoonful of minced garlic
- ¼ of a cup of lemon juice
- ¼ of a cup of vinegar
Steps to make shaiyah:
1) chop the lamb into squares, keep a little bit of the fat so you can use it to cook it.
2) add one spoonful of salt, ground coriander, ground pepper, minced garlic, ¼ of a cup of lemon juice and vinegar, and one chopped onion. Mix it all together and let it rest for 30-60 minutes so the meat absorbs the flavor.
3) in sudan, we use a metal plate that has holes in them in order to let the smoke from the barbecue give it a smokey flavor. If you don’t have one, you can directly cook it on the grill and if you can’t, you can use a pan (the flavor will be different, but still delicious)
4) put the meat on the grill and let it cook slowly, mix it together here and there to make sure that it’s cooked properly. It takes approximately 30 minutes and then it’s ready!
5) shaiyah goes well with homemade sudanese hot sauce, look out for the video at the end on how to make sauce!
