Taiji, I’m sorry that my thanks are so long overdue, but thank you very much for your recipe and tips. This is one of my son’s favorite foods, and so I wanted to make it at home since freshly made is always best. I have to admit I was a bit intimidated at first, but I bought an inexpensive pan as a trial run and followed your instructions. After a trip to my Asian grocery store, I was ready to tackle takoyaki. The first few tasted fine but looked ugly, but after a few tries, I got a lot better at it. There’s just something so comforting about the piping hot batter, tender octopus, sauces, and dancing bonito. I’ve made it often for the past year or so. Thank you again for giving me the confidence to try and for an excellent recipe.

I made it and it was delicious! The recipe worked. My take (for future self that wants to remember) - I doubled the recipe and mine yielded roughly 24 (my pan was 16). - I didn't use octopus (fishballs, cheese, and mushrooms were what I had. I just chopped them to size) and pickled ginger (I added some freshly minced ginger and a light sprinkle of garlic powder instead once the batter was made). - Instead of 2 tsp of soy sauce, I did 2 tbsps. - The water I used was room temp. - I added PLENTY of green onions. I had some leftover mushrooms, so I minced and added with the green onions. - I added roughly 1-2 tbsp potato starch (couldn't find cornstarch) - I added roughly 1 tbsp sesame oil to the finished batter For the oil (the one on the pan) I used a 1 to 1 ratio of sesame oil and veg oil

Great video. I love octopus, but have eaten it grilled in a salad. This looks like an excellent alternative. Some suggestions: Match is consistently used incorrectly in all your videos. Look it up. The word means: a contest in which people or teams compete against each other in a particular sport. "a boxing match" It’s usually used to convey the idea that the food, sauce or other product goes well with…. That would be a better phrase to use. Another good word would be: verb 3rd person present: complements add to (something) in a way that enhances or improves it; make perfect. "a classic blazer complements a look that's stylish or casual"

If something matches, it goes well with something else. It's akin to saying the two foods or flavors pair well together. His vocabulary choice is fine.

I'm intrigued by this dish but the one time I tried it here (Canada), the inside was still raw and cold. I assume it is not supposed to be this way but I have seen comments online saying the inside should be "soft" or "gooey". Can anyone comment if the ones I had were undercooked or should they be like I described above?
@taijiskitchen
7 ай бұрын
the inside should be "soft" or "gooey". true but of course cooked through, since it will be cooked on the pan for at least 10 min. the only reason why it was cold as in your case, was that they must have used a premade frozen Takoyaki. I am sure that it was not raw (could have felt like it), since such frozen products are always well cooked, but of course should not be cold. if the store is still there you should tell them that it was cold inside.
@bitbyterjr
7 ай бұрын
@@taijiskitchen I believe the frozen ones are pre-cooked? I think these were freshly made but undercooked as it was indeed raw batter as the center was still liquid. I cut the second one open and liquid batter actually ran out onto the plate. Not sure if the place is still there as it was a few years ago. It was a bad experience but all the media I've seen of Takoyaki makes them look so good. None that I have seen online seem like the ones I experienced but the comments of a soft or gooey inside made me hesitate. Thank you for confirming the ones I had were most likely undercooked and not the way they should be.
