Southern Fried Cornbread
1 cup of yellow cornmeal
1 cup of self-rising flour
1/2 tsp baking powder
1/2 tsp salt
2 eggs
1 cup of buttermilk
2 tablespoons of sugar
Butter
3 tbsp Bacon grease(add 1 tsp in mix)optional
Veg oil
Whisk all dry ingredients, then add eggs and buttermilk and 1 tsp of bacon grease(optional). Batter should be just a little thicker than pancake batter. Drop about 1 1/2 tbsp of batter in hot oil and bacon grease, flip when you see it bubble up. Drain on paper towel, pat with butter while hot…enjoy!!!
