Roasted tofu recipe: low sodium, plant protein option for renal diet. It's all about the texture and flavor!

Recipe makes 4 servings
Ingredients:
1 12 oz block extra firm or firm tofu
1 Tbsp. coconut aminos or reduced sodium soy sauce
1 Tbsp. nutritional yeast
1 tsp. sriracha or other hot sauce
1 tsp rice vinegar
Sprinkle of garlic powder, onion powder, pepper, or other favorite seasoning
Directions:
1. Preheat oven to 400 degrees F.
2. Press water out of tofu (see video)
3. Cut tofu into cubes and place in a mixing bowl
4. Prepare marinade (coconut aminos, nutritional yeast, hot sauce, rice vinegar and seasonings)
5. Pour marinade over tofu and mix to cover all tofu cubes (option to let sit in fridge for a couple hours to absorb more flavor)
6. Place on a baking sheet and cook in oven for 20-30 minutes
