Hello Mike, that is very interesting how to collect tuba from the coconut tree. Tikay is telling me that she used to do it with her father in the bukid when she was young… For sure next time when we’ll visit you there in Cateel we will taste your tuba. Happy new year to all the family and special regards to Mama Rose.

i have a hunch that coconut trees with roots in water produce more than roots not in water. so it is good to maybe ensure that your trees have liberal amounts of water their roots may drink from.there are different ways to accomplish this. you can research the many ways and pick what is best for your application. if your tree is not producing much tuba.. then it may be that the roots havent a good water contact. i am not familiar with coconut root systems. but with fruit trees in america you can run a pipe into the soil about 6 or 8 or 10 feet. and hook a pressurized hose to it to inject water into the soil. the best kind of soil to hold ponds of water down that far is pockets of pete moss. before you plant a coconut tree you can dig down and layer in pockets of for water pools. if in the philippines. maybe there is something similar to pete moss that can be used to hold pools of water for the roots to draw from. you should study the situation first. make sure its ok for trees roots to sit in directly in water most of the time. here.. the apple trees roots can not sit continuously in water for long periods of time. so watering tree is done less frequently. but enough to ensure there is water enough to nourish the tree.

During my childhood, in my grandfather's farm in the mountains of Cebu, we can hear the rhythmic sounds made by mananggitis collecting tuba sap inside a kawit, cleaning the sugong using a pitlagong with rhythic sounds and tapping the pitlagong to remove debris.

I am attempting to make a sort of lambanog right now , though I don't have access to coconut palm sap so I am using coconut palm sugar, I would love to try the real deal and see how it compares. I know it will be different but I can say that my version sure smells wonderful can't wait till it's all done . Maybe one day I will have to visit the Philippines and see for myself 👍

That was great documentary Mike! Now I know the process. Thanks for sharing! I will try this. Unfortunately, I need to plant more coconut trees then have to wait for them to grow. How many years does it take for those dwarf coconuts to grow?

Cellophane is indeed a wise decision because if you use sugong (the classic bamboo container used for catching the sap), rain water can mix and bees and lizards can enter the sugong and die inside. Yucks! hahaha

Wow, thanks for showing us the process of collecting coconut wine. Is there a process to make a vinegar from the wine? How’s the process since the first drop after a few hours is considered wine or tuba, how many days or steps in the fermentation process will it take to make a vinegar? Another, how come it’s white and the common ones we see in the bottle sold in stores are orange even the vinegar are orange? Thanks😘
