I've been living in Tunisia for the past couple of years. I've been making this exact same pasta for a long time (sometimes using only yellow cherry tomatoes, which have a sweeter and richer flavour than the red ones), though since moving here, I've started adding small amounts of finely chopped confit lemon, a staple in North African cuisine. It heightens the taste of the capers and brings a wonderful acidic zing to the sauce.

This recipe is fantastic Vincenzo, definitely worth trying now that summer is approaching. I'll tell you my version of "Tuna Pasta". I take the tuna fillets from the glass jar, drain all the preserving oil and add extra virgin olive oil and fresh basil leaves. I let it rest for an hour, then I add part of the oil flavored with a clove of garlic to the pan. Once browned, I remove it and let the passata cook over a low heat, just as long as the pasta is cooked; I cook the pasta (I prefer long pasta, a good spaghetti, or spaghettone) 👍 When there is 1 minute left in the sauce, I add the tuna and basil preparation (it doesn't have to cook, it just has to give the right aromas and flavors to the pasta). I finish cooking the spaghetti al dente in the sauce in the pan, and let it cool slightly, adding more fresh basil to taste. An exceptional dish, which tastes of "sea" and "summer". Let me know what you think, great video as always👍

What a coincidence! I made this today. Not knowing what I was doing - seat of the pants, and out of order steps-wise from Vincenzo's process. Today I used penne rigate. Here we call the round small tomatoes cherry tomatoes, the ones I use and Vincenzo used, are called cocktail, oblungo. Back in the States, I think we called the oval ones grape tomatoes. I cook this dish for myself often. Next time I think I'll revisit this video to do it correctly.

@@vincenzosplate Initially, I sauteed garlic, I don't think I use onions with this recipe, seasoned with salt, pepper and basil. I think I then put in the small can of tuna (which I know from your videos was wrong). I then added some diced cocktail tomatoes and some tomato puree. I let it cook for a while before I start the water for the pasta - opposite to your method. When the pasta, penne rigate, is ready al dente, I finish cooking it in the skillet with the salsa. That's the best I can remember.

My humble 2 cents: I don't call it a 10-minute anything unless that time includes organizing the whole stuff. I did what I call "lazy tuna" once. When my pasta was just slightly undercooked, I drained it and mixed with a can of tomatoes chopped in cubes, added a pinch of salt and a can of tuna and all olive oil it came with, mixed again, and covered with grana padano from a bag (flakes, not grated). That's it. Can hardly get more basic than that but I loved it. Will definitely do it again.

Hey Vincenzo! I thought maybe it would make sense if you cook tomatoes for 30 seconds first so they release their water, then you can start cooking garlic (I like more garlic) with no worries. Logic being it's faster and no extra water. What do you think? Anyway, I love experimenting while cooking and it's easy to do with italian-style sauces. Isn't this art of cooking all about experimenting?) I made pretty similar sauce but big batch. Ate it for 3 weeks and it's great but I like bolognese more)))

When you used canned tomatoes you don't have to worry about the water... fresh tomatoes on the other hand yes, they have water that needs to evaporate 😊

What do you think about doing Tuna Pasta as a 1 pan where all the starch and creaminess gets mixed together? 1 cup of boiling water per 125g of pasta

@@vincenzosplate Yes, I will try something new soon. I started with your tomato sauce and then bolognese sauce with David. My brother said, “when are you going to finish!” 😂😂 Now I am a dishwasher at Brunetti Classico Moonee Ponds. 🍽️💦💦 Oh, the other night I made your “aglio e olio!”👍🏻👍🏻👍🏻😍

I don’t personally like warmed tuna from a can but fresh would be lovely 😋 Put the cherry tomatoes between two lids and slice between the lids - all the tomatoes are cut at once 👍

Ciao, Signore Vincenzo. May I ask about peeled tomatoes weight? 400 grams of net weight or 400 grams of drained weight? A can of peeled tomatoes I buy has 400 grams of net weight and 250 grams of drained weight. And which tuna is best used for this dish? Flakes or chunks? Please help. 🙏

Quick question. Are you adding salted capers, like you did with the Puttanesca, or out of a jar ... I see in Australia at Woolworths you can get capers in a jar in white wine vinegar or in brine.

Vini! I see you are using a butane burner! I was going to buy one of these but was talked out of it when I read that you cannot use a full size pot or pan, because the tank could EXPLODE! I see you are using a good size pot and pan on there. Any thoughts about that? Electricity is so expensive I want to try one of those to see if it saves me money.

On my recipe plans! Help me understand, please. Will you explain why this sauce is cooked so fast and why other needs hours of cooking? Is it because of the type of tomatoes used, or other ingredients?

Swap the capers for green olives. Get more black pepper in there. Add some cheese on top.
