If you're like me, you want to make use of as many leftovers as you can; here's a quick and easy recipe for that leftover turkey, or chicken
Preheat oven at 400
Ingredients
3 Cups Leftover Turkey (Chicken can be substituted)
2 Pie Crusts
2 Cups Carrots (Sliced)
1 1/2 Cups Potatoes (Diced)
1 1/2 Cups Onions (Diced)
1 Cup Frozen Peas
1 Cup Heavy Whipping Cream
1 Cup Water
1 Can Cream of Celery Soup
2 Tbsp Butter
3 Tbsp Flour
1 Tbsp Better Than Bouillon Chicken Flavor (or substitute w/1 Knorr's Chicken Bouillon Cube)
1 1/2 Tsp Onion Powder
1 Tsp Garlic Powder
1 Tsp Black Pepper
Salt to Taste
Slice Carrots and dice onions and potatoes; Heat butter in skillet, add carrots and onions and cook until tender; add potatoes, seasonings and stir in flour and cook until slightly tender
While veggies are cooking place one pie crust in casserole dish and bake for 7-10 minutes
Add Cream of Celery soup and 1 cup water, stir until soup is dissolved and creamy
Add frozen Sweet Peas
Pour in Heavy Whipping Cream stirring until slightly thickened
Add Diced Turkey and cook until thickened
Pour mixture into Pie Crust
Place 2nd Pie Crust over the top and add slits
Whisk egg and slather over top of Pie Crust
Bake at 400 for 55-60 mins., less or more depending on your oven
