+HealthyGroceryGirl Hello! I actually doubt maple syrup would work correctly in the place of corn syrup do to it's chemical differences, but it probably would give a pleasant maple flavour if it worked. Have you tried Brown Rice Syrup? It works wonders for me in the place of corn syrup. :)

This is great. I love making marshmallows. I've made regular marshmallows at least dozen times but never thought of making them vegan. Perfect for folks following vegan diet. I've never used agar powder though I've heard of it, I'm curious does have a taste or is it tasteless.

Allowing the mixture to fully whip before incorporating the flavor is a big step. Lots of extracts dissipate in really hot things. Also inhibited full volume.

+oritjunior Hello! Have you tried Brown Rice Syrup? That's what I use in the place of corn syrup and honey, and it does perfectly. I have made marshmallows and candy corns with it and to a great success! The down side is a light brown color it will give to your food that corn syrup doesn't. But a little brown does not mind me. :)

That's what I thought too. It looks strange because it's vegan. It'll look normal if you use all the normal ingredients and just substitute gelatin with Agar.

When I put my agar agar in cold water it did not clump up like yours. I think because My agar agar already has sugar in it. I checked the ingredients and it said agar agar and sugar.Other brands of agar agar look more finer and don't contain any sugar.I used the golden coins agar agar.

No. You can use non-vegan sugar...Vegan sugar and normal sugar are the same, but one is guaranteed not to have bone char in it.

Meh, this doesn't look like it was made properly. I saw other recipes with beating agar agar with sugar syrup and those other marshmallows actually looked like marshmallows. This one looks like something wrong happened while it was cooking, so it could not turn into a foam. And it seems to bee really dense and really chewy like mochi, while marshmallow should be soft, fluffy and only a little bit chewy. Fail to me.

Was I supposed to mix it with the sugar? I just powdered it on the bottom of a container and then on top of the mixture, using the same amount as you did. I made two, the second one I let rest overnight and it was okay but still kind of droopy. The first container also had a thicker marshmallow layer so I'm not sure what caused it.

The primary distinction between cane sugar and beet sugar, other than being derived from different plants, is the processing method. Unlike beet sugar, cane sugar processing typically takes place at two locations, the sugar mill and the refinery. During the final purification process, cane sugar is filtered through activated carbon (charcoal) which may be of animal, vegetable, or mineral origin. This step is unnecessary for beet sugar and therefore is never done. Over half of the cane refineries in the United States use bone char (charcoal made from animal bones) as their activated carbon source. The bone char used in this filtering process is so far removed from its animal source that cane sugar processed in this method is deemed kosher pareve, which, according to Jewish dietary laws, means that it contains no meat or milk in any form as an ingredient. Some granulated sugars have bone char in them. Just got to research the companies that do it. I prefer to go with organic as well.

+The Vegetarian Baker We have something here in New Zealand called a Toastie (no, not as in a toasted sandwich, although they're both called toasties,) which is marshmallow, about the size of a packet of cards, coated in chocolate, then rolled in crushed nuts. It is then coated in more chocolate then rolled in toasted desiccated coconut. I think your marshmallows would work wonderfully. It's been about forty years since I had a Toastie. I really appreciate your channel, thank you.

+Nicole Biggs most cane sugars are first filtered through bone char, while most beet sugars aren't. Not saying all beet sugars are safe though. All USDA certified sugars are though

TheVegetarianBaker Depending on where you live, you can buy them in stores, but they tend to be a bit on the expensive side. The ones in the stores are also better suited (sort of) for s'mores. I buy mine from a chain called Whole Foods, but I love that you have a recipe so I can make them at home when I feel the need for rice krispie treats. Thanks!

Bungie Kain I am currently vegetarian. I have been for 7 years, however I am about to make the transition to complete vegan. I will still make vegetarian recipes though :D
