🌱🍅🫒 For the vegans here, you can replace the chese 🧀🥜with ground pistachio, ground pealed almonds or even ground up seeds like pumkin seeds. (You can grind your nuts or seeds in a coffee grinder, food prcessor or blender.)🌰 And for people who cannot eat grains, like me, you can make this dish with Jovial grain free whole casava root pasta. 🍝

Be careful though,. I haven't found a pecorino that's truly vegetarian yet. It may not be an issue for your sister in law, but strictly speaking pecorino and parmesan aren't vegetarian because they use rennet (stremsel in Dutch, caglio in Italian) that comes from a dead animal. If your SIL only eats truly vegetarian cheeses, there are plenty of vegetarian pasta cheeses you can try as a substitute. A good option might be aged Dutch sheep gouda that's made with vegetarian rennet. In case you're living in The Netherlands: AH Biologische kaas, in my experience, is always vegetarian friendly. They use 'microbieel stremsel' in stead of 'dierlijk stremsel'. Eet smakelijk!

Wonderful dish for anyone, not just vegetarians. My addition to the sauce is spinach, love to stir it in just at the end to wilt it but not turn it into mush. I have also used butternut squash instead of zucchini, that is awesome, btw. Great video, great recipe, much appreciated!

Nice every time your or pasta grammer do veggie recipe's i pass them along to my vegetarian friends, also helps me build that cooking nitch up, i would add yellow squash, potatoes, butternut squash, maybe a small head of raddico and small chilli peppers for some sweet&sour heat mushrooms would add a second meaty flavor, i may not like mushrooms but i had to learn to try foods i dont like working in the kitchens

Kind of surprised how badly I managed to mess this up. For starters I used way to much vegetables for just myself, I burnt the sofrito a bit. I forgot I didn't have a blender and my hand pull one was broken, so I used an electric mixer which kind of worked but I got my finger stuck in the mixer when taking the things out. So in ran the tomatoes through a sieve into a bowl added it into the vegetables and am now hoping for the best. I can do better next time lol.

my vegetarian dishes usually an oily pasta like agile e olio but I add chilli flakes, olives, and cappers. and to make it non vegetarian I usually add anchovies or canned octopus ($5 from Coles)

The best simple ingredients in one pasta dish, what else do you need haha… one of my favourite pastas. Looks amazing Vincenzo 😋 I make this quite a bit , but for me I dont use the carrot and celery…. And I prefer the vegetables either roasted for charred flavour or cooked in pot on high for a few mins to get that char flavour, yummm 😋

Hmmmmn, definitely going to make this, but probably use less salt (blood pressure issues), add some kidney beans to bulk it out and split the sauce 3-4 ways for multiple meals. Oh probably a whole onion and other vege, because I'm poor and like to stretch meals out :P Plus a knob of butter for a bit more flavour and 1 or 2 chillies of course. I'll also probably split the sauce before adding basil to preserve the basil flavour better. Though this dish definitely deserves fresh basil, which makes me wish I was more functional so I could grow my own fresh stuff...

This is the real poor man's dish, that tastes better than anything with cream and you could add whatever meat you wanted. The pecorino will be the only expensive ingredient here but the dish doesn't need it and you can add whatever other cheese you want. If you add the cheese skip the meat, if you add meat skip the cheese. Splendid video!

I keep forgetting to comment on this video but I've made this for my wife because she's a vegetarian and she loves this. I do too and I'm a meatatarian lol. This is delicious and this would also be great for kids that don't like vegetables.

GG Pasta sauce! You had me worried there with "generous amounts of extra vergine olive oil" that looked like a whole 250ml cup 😂. Much smaller with your hand in comparison though. I make a very similar sauce with bacon or ham (leftovers), spicy pepperoni peppers and zucchini. I'll have to try the eggplant and paprika combo. The problem I run into is the zucchini giving off a lot of water, diluting the sauce and if I wait to reduce the whole thing enough the zucchini will get all mushy. My plan for the next batch is to cook the zucchini in another pan and just re-add then to the sauce after it has been reduced so they don't fall apart. Thoughts?

Roast an entire head of garlic and add at the end of making the sofrito to increase the creamy flavor. If you want SUPER savory flavor, get dried tomatoes, mince them fine and blend with the tomatoe sauce. I'd say 2 or 3 per quart. The main thing is the dried tomatoes need to express their flavor in the sauce. Vincenzo really knows how to simmer, so you can just add them in with the tomato sauce in this recipe.

Beautiful dish Vincenzo. However if I may just comment one thing, I think the sauce could have been reduced alittle longer. Just looks a tad too thin to me. And thus I am relieved that you didn’t add the pasta water this time as it’s a tad too thin. But would still love to eat it❤

Just made it - delicious! Though, I went to the small, nearby grocery store, so I had to leave out the egg plant and the celery. I just put more of the others (including a mid-sized carrot) + added celery root in the first batch with carrots & onion. Also, they only had "orange" rigatoni, so I bought Rummo's fusilli instead. Used 1000g of Mutti's passata, it was just about right. Even with that store's prices, it was just 10€ total, not counting the pecorino and olive oil I already had, and I'd say this serves 4 people. Oh yeah, I sliced one fresh jalapeño in there. I don't know if that was a sin against Italian cooking, but I'm happy and not apologizing!

Since I started cooking your recipes with high quality authentic ingredients I prefer eating pasta at home compared to restaurants. You completely fucked up my standards. :D Good thing I live in europe so I can get almost everything in high quality. I got to a point that I am ordering 4 kg pecorino sardo cheeses straight from Sardinia.

@@vincenzosplate The more veggies the better, for me at least! I eat a little meat (mostly chicken breast- to everyone’s dismay!) but I prefer vegetables! The only problem is that I’m not a huge fan of eggplant, mushrooms, olives artichokes, asparagus…which seem to be the most popular vegetables in vegetarian recipes!😂

My vegetarian friend wants to eat pasta tonight and I'm making this! The only thing I wouldn't have is pecorino cause where I live, it's not really easily available. I'm substituting that with parmigiano. Have no other choice. These cheeses are frightfully expensive in India.

Hey Vincenco. I’m a Melbourne boy living a long way from home. Here fresh produce is abundant but anything “italian” is hard to find and when I do find the price is crazy. So olive oil is always expensive…. extra virgin….,,I need to donate a kidney😂. I’ve been using coconut oil? Your thoughts? Thank heaps. Luv ur channel
