Sanitize jars with starsan sanitizer, boil the jars OR run them through your dishwasher on the sanitize cycle.
In each jar:
1/2 tsp dill seed
1 sprig fresh dill
1 to 4 cloves of garlic chopped
2 to 3 bay leaves
1/2 tsp chili flake
1/4 tsp yellow mustard seed
Brine for about 12 jars:
1/2 cup kosher or pickling salt
1/2 cup white sugar
1 quart white vinegar
2 quarts water
Boil liquid add salt and sugar, stir till dissolved. Pour over vegetables while boiling. Apply lids that have been soaked in warm water, hand tighten. Place jars in a boiling pot of water, make sure the jars aren't in direct contact with the bottom of the pot. Boil jars for 5-10 minutes (for softer vegi's like pickles boil for 5 minutes for harder vegi's like carrots boil for up to 10 minutes). Remove jars and allow to cool over night. Check lid for proper seal. Sit jars for at least 3 weeks before eating.
