While I enjoy some of the more colorful barbecue gurus on KZitem I find I really appreciate your no frills laid back approach to to smoking. Especially helpful is your analysis of what went wrong and how to manage that, because that is the way it really happens. Looking forward to more of your videos.

Enjoyed seeing your SF Giants affiliation. I have a story about Willie Mays. He lived in Atherton, CA. I worked for the telephone co. In that area. A fellow crew member went to install his phones. After saying Mr Mays where do you want your phones. Willie said sit down and tell the cook what you want for breakfast. He had asked Mr. Mays if a fellow crew member would come by and meet him. He said bring the whole crew. Not only was he a great baseball player he was a good man.

i really love the way pk grills are built and made to last. i haven't broken down and bought one yet because i wish they were a little bigger. Maybe when i do some more camping trips in the future.

I agree, the amount of cooking space ideally should be increased, especially on the PK 360 considering how large of a footprint that it has. The limited amount of cooking space is what keeps me from using my 360 as much as my Weber Summit Kamado.

Great video. It was really good idea to add charcoal that you had already started when your temps were down. I'm going to try that next time I do a long cook with the PK. I've added out of the bag and if the fire is too low it is a bit of a mess getting the temps back and the smoke clean Also, I'm where you are about the competition style wraps with butter and brown sugar. I'll try honey next time. Thanks.

I have also tried to add unlit coals & like you said, it can be very challenging. Adding pre-lit coals made a big difference.

Honey , brown sugar , grill seasoning , soy sauce , Baby Ray's original is all you need on pulled pork butt I've tried so many so called expert ingredients but that combo is by far the best Oh and I put all that in after it's pulled and toss it

how does the digital thermometer match the dial thermometer? is the dial thermometer accurate? What did you say you are using for a charcoal basket? Kick ass basket? what's that?

Using a digital thermometer allows you to monitor the temperature at the grate level, next to your food. The built-in thermometer is above the grate. You can certainly cook by using the built-in, the digital thermometer just allows for more precision if you want it. The Kick Ash Basket is a third-party basket that you can load with charcoal. It makes it easier to setup your coals on one side of the cooker. Pit Barrel sells their own version of a charcoal basket but the Kick Ash Basket is larger and has more depth.

I use a few different temp probes… I like the instant read thermometers by ThermoWorks & Fireboard’s Spark. I have a less expensive one by InkBird that works well. I also use Fireboard’s Drive (wired probes) and Combuttion’s wireless probes.

Happy new year. Great cook. Couple questions. Do u think these were your best ribs bc the meat came from creek stone farms? Also, what does the PK offer vs a weber kettle with an SNS? Just trying to justify the price difference to myself. Especially with the used market for weber kettles so prevalent. Lastly, the PK is a nice looking grill.

While I think the ribs from Creekstone are consistently of high quality, I think these were my best ribs because of the process that I used to smoke them, to get them tender and the flavors imparted from the rubs, honey & butter. I think a kettle with a SnS is just as good as a PK. The SnS is probably the best accessory that you can add to a kettle. I’d probably start by adding the SnS and then decide if you still want or need a PK. I just got the low profile SnS for my Weber Summit Kamado that I will use in an upcoming video.

You can squeeze 2 racks of ribs on the PK 360 without a rack but there won't be room for anything else.

This is the video I noticed that you don’t use the original charcoal grill that came with the PK360 and place the KAB directly in the grill which I think makes sense so you wouldn’t have to remove two grates to clean up remaining ash left at the base of the grill. Just want to know if it would affect air flow sitting directly on top of the ash covers and close to the base or possibly damage the vent covers because PK states to keep charcoal away from the sides of there grill. I know I commented on this before on another one your fantastic videos of that have taught me a lot, but I just need more info, and have you tried using just the KAB again on another cook. Thank you

How do you like cooking on the pk vs you’re kamados? I have all types os grills two pk's and just ordered a kamado i guess im trying to justify my expensive purchase lol

For me, the main differences are food capacity and portability. The kamado can more easily handle a large brisket, ribs or a turkey. You won't feel like you're trying to squeeze meat into the kamado. The PK is much easier to move around, especially if you remove the side shelves on the 360. Once you get the kamado in place, you won't want to move it often. As for cooking, they both hold temps extremely well and they are easy to lock in. I don't really give one the edge over the other except the 2-zone cooking setup is more intuitive on the PK.
