My abuela always smashed the black beans against the side of the pot a few times during cooking process to get that thick rich creamy soup quality. In fact w all bean soups she made. Also, more nutritious to leave the skins on the sweet potatoes. A good scrub on them will clean them up real nice before dicing them up.

As a plant based eater who has lives in different places i will say the cost is all about location and season. You just have to be flexible and be creative on whats available. Aldi is amazing though. Its quick and simple and they sell whats in season making prices cheaper.

Your channel is life-changing! Amazing recipes, full of flavor, never boring and so simple!! Also, I am jealous of your yard and location!! I used to live in California and the climate is perfection: temperate but cool nights, very enjoyable for all things outdoors. And such variety! Mountains and the beach!👍👍😍 While I like the availability of year-round fresh produce here (South Florida), I hate that it’s too hot to grow almost anything but tropical produce, and it’s 90F+ 363 days out of the year and with the humidity, feels like 103F in the shade! 🥵🔥 Quick question: You may have covered this somewhere, but I haven’t navigated everything just yet. Do you have any tips on how to properly store beans and rice for the week? If I do plastic containers, in 2 days they get that weird “juice” that doesn’t look good, as if it is breaking down. I have tried the freezing in zip lock, but they tend to dry out. 🤔

I love this video!! Please more like it :) I usually plan out my meals but have a hard time figuring out how to incorporate the food I have cooked into other meals. My husband and I have a hard time eating the same thing twice also. When grocery shopping I buy the items that I need for the recipes and then not sure what to do when I have stuff leftover because I didn't use it all in the recipe and I am cooking a completely different recipe the next day. It's also so time consuming to figure out what we are going to cook and eat for the week. Your video is perfect to save time, money and have a weeks worth of meals DONE!! :) Thank you! :)

For the beans, I had to substitute a few things but it still turned out amazing and delicious! I ran out of salt so I used seasoned salt instead. I couldn’t find my red pepper flakes so I used cayenne for some heat. I used canned black beans because I want to get rid of some pantry items that’s been sitting there for forever and to budget as well. I’m putting it over rice for lunch, it’s super easy to make as well as a nutritious, delicious and a cheap meal! I also want to say that I’m not vegan, I’m just looking for healthy meals to make at home and this was perfect!

Thank you so much for this, it was so inspiring! :) I loved the meal ideas that you came up with on a restricted budget and thought it was all very inventive and creative. I'm really motivated now to try some of these meal ideas, already have the brown rice pudding simmering away on the stove! :) I was thinking the mushroom and walnut crumble could even be made into larger patties instead for something different to add to one of the meals, maybe with some mashed cooked sweet potato to help bind them together and a bit of flour? :)

I'm so sad to see these prices. I'm in Canada and in the winter fresh food prices are INSANE especially during the pandemic, stupid trucker protest and now the war in Ukraine. You won't even find onions and garlic at less then $3-5 for a fairly normal amount. Avocados are like 3/$10. Professed food or eating out can be cheaper than making a meal sometimes. This gives me hope going into summer. Thank you! ❤️

Comes with a price of all that plastic waste, and the approx 20% waste caused by these mega centralised food production & distribution systems!. You should take a look round the back of Aldi (or any supermarket), you would see skips( Dumpsters in US) FULL of perfectly good food, and every other thing they sell. Toilet paper, Detergents, anything even tools and clothes, if there is a slightest mark, scratch, dent, or with food, day of sell by date, it’s chucked away! That’s after the massive waste on the massive farms where veg is wasted just cos it’s a bit too big or mishapen etc. Then there is the Pallets of waste at the Supermarket Warehouses. Pls think, from cradle to grave, there is only 1 Planet! 🌎🌻💚✌🏽 ‘’Veganism is not enough’’( the late Kathleen Jannaway, Co Founder of the Vegan Society, 1944), I personally heard her say that, she meant of course that Veganism needs to be Environmentalism as well, or we are harming Wildlife.

Not sure schools even bother with Home Economics anymore, they have cut Civics, Real history, etc. I have college kids follow me since I went back in 2005-2009 (part time at first, because I'm mobility limited), and sing Karaoke every chance I get even competitively. They are starving for someone to fill in the gaps. They are family I'm not financially responsible for, but I love em, as much.

I am personally not vegan but this is one of the most impressive vegan/recipe/budget saving videos I have ever seem on this platform. I don't do dairy often but I do eat some lean meats like turkey, chicken, and fish. I rarely eat red meat. I look forward to making these recipes as I am getting back into meal prepping and have an Aldi's that is walking distance from me. Thank you for all the hard work you put into this, it did not go unnoticed. 😊 I've never seen so many positive comments. It's really nice for a change.

Everything looks so delicious, I’m excited to try these! I too cannot eat the same thing everyday & neither can my kiddos! Btw way kids and I LOVE your Crunchwrap recipe! My kids get super excited when I make them 🙌🙌 And I recently shared that with my sister and mom! Rave reviews all around. 😄

Greetings! The algorithm sent me and I'm glad it did! I'm not vegan, but eager to cook more plant-based meals. Everything in this video was SPOT-ON exactly what I was looking for in a weekly meal plan. Pre-prepped building blocks, lots of flavor and different combinations that all look delicious and satisfying. I'd eat every one of these recipes (though I'm a little skeptical about the "meat"). I'm definitely subbing for more!

Eating the black beans + sofrito with rice and avocado for lunch today. It is amazing!! I’m so happy this video was suggested for me. I’m not vegan (yet 😆), but I’m loving all of your plant based recipes!!
