Been to japan and calamsi is hard to find and honestly lemon is much sweeter than calamansi. Hope you can find calamansi there. My mom lives in Aichi-ken takahama and will come home to the Philippines for 1 week in October if the calamansi would go through the airport with no problem I am more than happy to have my mom send you some. haha.

There is actually calamansi in japan. It is just seasonal though...I have bought it before in Aeon mall. It's called sudachi (酸橘).

Lemon is sweeter but less flavorful, less aromatic than Calamansi. I still prefer lime for flavor, aromatic

I love eating my tapa with tabasco sauce. I would also cook the rice after the tapa using the same pan so it absorbs all that goodness that’s left. Well done Hiro!

I wonder what if some Filipino foods stayed in Japan and instead of just restaurants/eatery businesses like our fried foods might become famous as after work meals with beer, as I observed that in Japan people really love healthy/nutritious and homey foods it's quite exciting with the feeling of Filipino foods being introduced in Japanese schools.

I usually cook the eggs, then the beef tapa next and the garlic rice last in the same pan. That way the garlic rice will also inherit a hint of the tapa flavor and it will not need additional soy sauce or extra flavorings anymore. Add sliced cucumber and tomatoes on the side if atchara (pickled green papaya) is not available. This will make the dish balanced and more pleasing to the eye. ;)

i like eating tapa with "atsara"! It's a sweetly pickled papaya and vegetables. I think any sweet-sour pickles would go well with it to cut through the richness of the tapa

You can add some green onions in the rice to make it fragrant. Also, the meat is dipped in spiced vinegar or "atchara" (pickled papapaya + veggies), similar to how Koreans eat kimchi, but it isn't spicy.

hi, please try to make mango tapioca with gulaman---color yellow. if you want extra color green and orange. ingredients: mango, tapioca pearl, all purpose cream, condensed milk, evaporated milk, you can also add grated cheese if you like but it's yummy.

As an alternative to adding lemon juice and marinating, you could make it almost like a steak; salt, pepper, garlic powder and just fry it up then eat it with a vinegar dipping sauce (spiced vinegar, white vinegar, vinegar with soy sauce, vinegar with soy sauce and calamansi or lemon) along with your garlic rice and egg. Works better with thinner slices of beef, so I think marinating the cut you had worked better. Great stuff!

Yum Nice meat for Tap-si-log (Tapa, Sinangag at Itlog) 😋they where originally made with dried beef (Beef Jerky) their tough though and I don't remember putting pepper on the fried rice as it offset the taste, maybe spring onion for the taste and garnish or some Atsara on the side (Pickled Papaya) the Japanese pickled ginger works great as well, Should try the other Si-Log variety (Si-nangag + It-Log) like Da-Si-Log, Da for IsDa means fish, like fried Bangus (Milk Fish), Smoked Galunggong (Round Scad) or Daing na Isda (various dried fish like anchovy) or the meat variety like To-silog "Tusino" (Sweet Pork meat or salty like bacon), Long-silog "Longanisa" (Smoked or UnSmoked Pork Sausage usually sweet) or Corn-silog (Corned Beef) this is more recent (canned) and isn't traditional, most of this items is dried, smoked, preserved food items for breakfast the reason for this is in ancient times the fresh catch like fish seafood in general or freshly butcher meat hasn't made it to their kitchen or dinning table 😉😁 Now a days it's fresh from the butcher or fish monger but still replicate the taste of the old days. 👌👍😎✌.

Lemon is a good substitute for calamansi. If you make this again, consider using a blend of lemon juice with sudachi or shikwasa or yuzu. Thank you for demonstrating how to cook Filipino food in Japan.

Hiro. Add a little oyster sauce and msg into the rice before you finish cooking it in the pan. Taste much better. Edit: just add the rice when the garlic is ready. It adds to the taste. 😂

I encourage you to try different Filipino cooking. Our seasonings are very basic which are vinegar, soy sauce, fish sauce and salt. You can easily follow them and I'm sure you will love them as well.

Wow! These are perfect eggs, l like mine cooked like this. Anyway, you may have a side dish for this because I find it a little dry. You may add cut up fresh tomatoes with a bit of fish sauce or Atchara. You can buy Atchara from the Filipino store or simply concoct your own. It’s very simple or follow from KZitem.

my observation in philippines, the people smile when having their breakfast. 😊 . i remember the fried smoke dried fish called tinapa. fresh tomatoes cut like cubes with green grape like seaweed as sides. then the sinigang soup. . i tried it. no wonder they smile. to this day, i always order the same "breakfast combo" every sun rise. made me appreciate simple and good things in life. the positivity is contagious, lol.😁

This looks great! :) Sometimes we also marinate it with pineapple juice. 🍍 It gives the meat a sweeter flavor and it tenderizes it too. :) We also serve this with spiced vinegar (vinegar steeped with chilis, garlic, and onion). これは素晴らしいですね! :) パイナップルジュースでマリネすることもあります。 🍍お肉に甘みが出て柔らかくなります。 :) スパイスの効いたビネガー(チリ、ニンニク、タマネギを漬けた酢)も添えて提供しています。

I'll try making tapa with sake next time. I'm quite interested with how the flavor is. Some recipes go for a saucy tapa if you'd like it that way

Sake doesn’t really affect the flavor but makes the meat tender 👍 I wanna try saucy one too 😊

Aside from the toasted garlic as topping for the rice, you still have to saute garlic again to fry the rice. Also, cook the tapa first then in the same pan cooked the garlic rice. Spicy vinegar as dipping sauce for the tapa or plain hot sauce.

spot on the tapa marinade hiro san.! im just curious how it would taste with the sake so i would try adding some the next time i make this. speaking of breakfast u might also wanna try tocilog or bangsilog or tortang talong next.

Calamansi with Soy sauce tastes like heaven, I hope I can see you there and give some Calamansi to you to grow in your backyard. They're easy to grow afterall.

I am really late to this party (been going through a lot too), but happy to finally see your take on this dish. Calamansi is traditional, but lemon works just as well (I daresay, better). The dish is flexible because it's friendly to people that want to have a different take on it. Sinangag (fried rice, the "si" in Tapsilog) can be made in so many ways. The go-to where I come from is garlic, onions & onion shoots. The beef (tapa- the "tap" in Tapsilog) can be a bit wet & greasy, or it can be a bit on the dry side. Depending on where it's served, it can come in small cuts or strips, or somewhat larger cuts. It's not a complete experience without a dipping sauce, usually vinegar and/or soy sauce with a dash of calamansi and some red pepper. Rice fills up the tank for the workday, the beef makes you feel that you've just had a good meal, and the acid from the calamansi just adds that extra zest to help make the rest of the day a little easier. You can marinate the beef with soy sauce, a bit of oyster sauce, pepper, minced garlic, vinegar, in your version you put sake, next time fry the egg, beef then the rice to make the sinangag more flavourful. But what you have cooked, looks delicious too👍❤️

If you have a PO box, you'll likely be gifted with our local ingredients/food from your Filipino fans of the channel especially the rare ones you have a hard time finding like Carabao mangoes, calamansi, etc. Just an idea. Also great job on the tapsilog, it's my all time favorite filipino comfort food. And yes it can be eaten anytime of the day but perfect for breakfast since it's hearty & delicious at the start of your day.

Pls ask any Sri Lankan working there whether they get any "Naaran" there in Japan ? That is calamansi. I'm sure it's available there. We have a tree here in Sri Lanka and during the season fruit some times rot away if we don't keep an eye on it. It has that many.
