Your canning reminds me of when I was younger and I would can 500 to 700 quarts and pints of veggies from our garden. Being almost 80 now, I only put a few bags of garden produce in my freezer. But those early years of canning kept my family fed all winter with only a few items needed from the grocery. Good Job Dumpster Cam!

I clean my beans. RINSE them. Put 1 cup in each quart and 1/2 cup in each pint. I pour water over them & let them sit overnight. I drain & rinse each jar the next day. Leaving 1 inch headspace, I fill them with boiling water. Add salt to taste. 10 lbs pressure 90 min for quarts, 75 min for pints. I've never had a mushy jar. This works for all beans: garbanzo, black, pinto, cranberry, large & small limas, mung beans, and kidney beans.❤

You can strain your yogurt in a cheesecloth to remove the way and you'll have a solid remaining and then the way can be used for bread or other things

Great job. That was nice of you to give your parents something to eat because I’m sure she didn’t feel like cooking. A lot of people are getting sick with something here at the holidays. I know that strep, RSV, Flu A & B and Covid are going around so, take care and be well.

A few questions and suggestions. Aren’t the jars supposed to be sealed when they come out of the pressure canner? Can put a dish towel over the jars to help hold in the heat. Cook your turkey in a cooking bag. The bags are available at Dollar Tree and follow the instructions. Put a couple of sliced onions and smushed garlic cloves inside the bird and salt it. We use two large foil pans. Double them up, cleanup is easy. One for thanksgiving the other for Christmas. Use foil and make a tent over the turkey. All the tasty juices will be in the bag and easily taken out with a large syringe. Make the hole higher up on the bag so none of the juices pour out into the pan. If it does it’s just harder to get out. We use some for gravy, save some to put in ziplock bags with the left over turkey. Cook the Turkey at least 30 minutes longer than instructions say. Meat thermometer into the thigh will tell you for sure. People will ask how you make such a moist turkey. 😉😉 Please get a exhaust fan over your stove. It’s worth the expense. Crack a window while cooking. Carbon monoxide almost killed my family last winter. We had a cracked heat exchanger on our furnace. What saved us was I always crack a window when cooking or running the dryer. Open the window a little bit in your laundry room. You could use your yogurt in a smoothie. Are quarts of beans and salsa too much for you? What’s not eaten could go in the freezer for another time. How do the dark tomatoes taste? You’re doing a great job saving food from the landfills.

Just found yr channel. What a busy bee you are. For the yogurt, leaving it run longer does not make it thicker but it does develop the bacteria more and it therefore makes it more acidic to taste. Some people like that, not my fave personally. But if you strain it in cheesecloth or a nutbag, you can get it thicker. Keep an eye on it as strained too long can go to greek yogurt thickness of even almost a cream cheese texture. If that happens, whisk back in some whey. For the extra liquid left behind, use it in your baking or use some as fermentation starter to make saurkraut, kvass, mix some in smoothies, etc. Your chickens would like it too. I was a little sad to see so much of the turkey not canned, but at least it did not go to waste. Happy chickens you must have. Tfs.

Love this video! You put me to shame - I probably would have had to check out after the first canner load. Last year I bought turkey on sale and I too had a terrible time getting it off the bone. Next time, I plan to leave it on the bone and break it down as small as possible. But great job. SO impressed.

I would love the recipe! This time the bread proofed for 20 hours (normally I don't do that long, but my Aunt said she had success with this new recipe) The starter had been fed less than 12 hours before I started

Check put this bean fritter recipie frim Hillbilly Kitchen. Imwoukd th8nkmtheu wouod go well with those softer pinto beans. Use the fluid from your salsa in place of water with some rice to make a Mexican rice pilaf, as a base for Mexican dirty rice, Mexican or Spanish rice, etc... Dice/ cube that soirdough bread then use in place of dumplings.

@@DumpsterCamOne year i was at the sewing machine at 6AM the morning of the 25th and declared that I needed a switch-up on my crafted Christmas makings. First, I adopted the stance that there is always another gift giving occasion coming up. But I also switched up my time table for making my sewn and crafted gifts. I like the process but not the deadline. When im in an era of sewn and crafted gifts, I begin right after Christmas amd sometimes as early as the quiet in tne evening of the 25th. I take that month of January or so to putter taking down the Christmas decor, cleaning up my craft area beginning by sewing and crafting through what's out, making what caught my eye during my holiday shopping, and making stuff I want to make whether it has any purpose or not in my life or on my gift list. I keep the Christmas music and movies going, eat Christmas treats received or purchased, drink hot cocoa and mulled cider, and all the background things going which make the Christmas season. I start the gift box for the upcoming year and at the end of the year, I donate those items which truly have no home to go to. I also begin any donation sewing for the forthcoming Christmas. The hot afternoons and evenings of summer are my next big production time for indoor crafting.

You are suppose to thaw any poultry in the refrigerator or breast side down in cold water in the sink, changing the water every 30 minutes. Do this 30 minutes per pound. Never just leave it in the sink as you showed…it can get bacteria this way causing food poisoning making people very sick! 😮

I'm 62 and never thawed turkey your way. No way for that covered turkey in the sink to get bacteria in the original store bag. Mine was taken out 2 days ahead to thaw in the dry sink (15 pounds at least) each time. Did this for many moons, no fridge thawing either. Just let it thaw in the sink, then take inserted bag out of the cavity areas and started stuffing then bake. At 350 degrees for about 3-4 hours covered (laying on top of remaining dressing in the turkey roaster). Uncover, let cook until all browned turkey/dressing. All 30 of us ate from it and got full along with other items....every year and we all LIVED. I'm even able to type and tell you about how we did just fine without any water. My turkey was frozen solid just like hers, the only difference is I didn't feed it to my cats and chickens..We ate it instead...it was so good twice a year (Thanksgiving and Christmas) everyone walked away Blessed, happy, full and healthy as a newborn baby. She did !!! She was acting very strange that night ❤ She asked me if she could have my Keurig and I felt sorry for her. I was thinking 🤔 NO 👎 friends of mine have ever asked me if they could have my Red Keurig. I was just thinking of of that 😅couldn’t BELIEVE it !!! I didn’t mind giving her dumpster diving stuff and yard sale things. She even asked for soup 🥣!!! I was very confused and shocked 😳 about her asking me for that and NONE of my friends have ever done that !!! Or asked me for my keurig very strange!! She was really out of it that night !!’

Oh, MERCY..dangErous. Hire someone to come install a wall vent fan. Be sure to get one with high and low. I sure hope those were all stainless steel pots. Aluminum will cause your food to spoil. The tomatoes are low acid and should have had some acid added. Really to be safe frozen is safe. Are you aware of dry canning for staples like beans and rice?

Definitely need to look into a vent fan again! i've called around a few places before and been denied, so going to have to keep looking. As long as following a tested recipe, canning is 100% safe, and shelf stable which is the big benefit for me. The salsa was a safe recipe with vinegar added. As for dry canning, that has not been approved as a safe method of canning, so I do not do that.

@@DumpsterCam I thing a good handyman could install a wall vent fan, They still sell them. The only issue would be any structures within the wall itself. Go to the oldest existing hardware store and ask for a recomendation. I am working on my kitchen. I plan on putting one in here. I have a hood vent. I dont want another one. Daddy made a great garden every year. We canned everything. That was our main food for the year. It took an army at harvest times. We rarely had meat. Had lots of biscuits grits and cornbread.
