Never in my life have I heard of coffee cake actually containing coffee. It's to be served when you invite your friends over for coffee, and as such is supposed to be really easy and quick to make.

As an x pastry chef, when working with thin layers of cake, the freezer is your friend. Freezing gives the cake more rigidity and releases better from parchment (assume it works with the silpat you’re using), reduces the crumb, and will also help set your icing so it doesn’t ooze out as you add layers. And, sorry, never knew of the requirement or thought that a “coffee cake” had or needed coffee.

I was under the impression that coffee cake never had coffee in it and really cinnamon and brown sugar were the only core flavors. It was also supposed to be a bit drier and stiffer since it was meant to be dipped in or eaten with coffee.

Shout out to everyone who recognizes coffee cakes they are familiar with typically don't contain coffee but aren't tearing David (not a professional baker) a new one over it. It's literally in the name and there are many coffee flavored cakes and desserts in this world so I can see how that might be confusing especially when the recipes you find contain coffee. Thanks for showing us 3 yummy recipes made by a home cook as many of us are 😊 I would definitely try any or all 3 of these over this fall/winter baking season since this is the only time I bake lol

In the UK, I swear coffee cake normally has coffee in it. The typical coffee cake has instant coffee or espresso added to the sponge mixture, finished with a coffee butter icing and some walnuts on top (other Brits feel free to correct me!) 😋

I’m was so shocked to see people say coffee cake as they know it doesn’t have coffee in it… it’s literally called coffee cake (in the same way you would say chocolate cake, carrot cake etc)… every supermarket has coffee and walnut cake and it’s one of my favourites! So funny to think it’s something completely different in the US!

@@nihlify I think the issue here is just a giant misunderstanding. When David was making this video, he was working under the assumption that he would be judging coffee-flavored cakes, and thought any recipe labeled "coffee cake" would be just that. As such, he judged a traditional coffee cake as though it was meant to be a coffee flavored cake. That is what people are criticizing. Of course, there's no rule saying old fashioned coffee cakes can't have coffee in them. However, coffee isn't meant to be an essential ingredient, and thus it's not fair to poorly rate a traditional coffee cake for a lack of coffee.

I've never seen a coffee cake with coffee in it. Coffee Cake is more of a breakfast cake to be eaten with coffee. Usually a sponge cake with some sort of butter streussel topping or some sort of crumb topping. Cakes with coffee in them as a flavor component, different entity entirely. Those are usually desserts or snacks. I will add that coffee cakes tend to be on the drier side of things. However, the ones I like tend to be more moist.

As well, when you look up coffee cake in the dictionary the definition is: “a cake, often cinnamon flavoured, with a drizzled white icing or crumb topping, usually eaten with coffee.”

Coincidentally (or maybe not), Glen And Friends Cooking channel just this morning did a coffee cake video with an explanation of how the "North American tradition" of "coffee cake" includes no coffee in the recipe. When he compares it to "tea cake" in the "English tradition" as having no tea in the recipe - simply a cake you have at tea time - then coffee cake makes total sense too. Pretty interesting.

Coffee Cake is a staple in the south it is a rarity to find recipes for it with coffee. Think of it like Monkey Bread or a doughnut, dessert that is acceptable to eat in the morning. Edit: That chocolate cake is definitely not a coffee cake. It does look delicious though!

Well now I need to make Emeril’s coffee cake! I’m going to need more apples. And it’s called coffee cake because you eat it at breakfast or brunch *with* your coffee. I’ve never heard of coffee cake made with coffee. That last one was definitely just a coffee and chocolate cake. It looked like one of the fancy desserts we used get for intermission at the opera matinees.

Like everyone has said, coffee cake doesn't actually have coffee in it, and is typically a buttery/cinnamony/streusely cake eaten with coffee or tea. But I still think this was an interesting video, especially in the order you presented it. Emeril's recipe is basically a fall twist on a coffee cake, with the apples and syrup. Claire's was a "classic" style recipe, just with actual coffee in it. And the M one was not a coffee cake at all, but as you said a chocolate cake with coffee. My only tip is that on the sponge cake you don't want to tap/drop the pan on the counter to level out the way you would with a butter-based cake, because the air from the egg whites is the only thing giving you lift. That may partly explain your cake's thinness. Still, the end product looked pretty good, and your mousse layers were perfectly even with the cake!

Every time I've had coffee cake, it has actually used coffee somewhere in it - maybe that is a UK thing though. That said, my go to is Mary Berry's cappuccino cake:) It's nice, delicate, and well balanced - a hit in my family for sure!

In my language coffee cake is called coffee bread and it is a product used to eat while having a coffee break.Just some sweet pastries or some spiced cake, but usually it is without coffee flavour :) It took me a while to fathom the concept "coffee bread", but it is kinda cool :)

As many others have said, coffee cakes don't contain coffee, they are called that because you eat them with coffee. Some countries that have a more prominent tea culture like Britain or Russia, call them tea cakes. But they are all similar in concept. And they usually are on the drier/dense side, because you're supposed to sip your hot coffee/tea with the cake in your mouth or even dunk it. Hence the "coffee coffee cake" name from Claire, as in coffee flavoured coffee cake. They aren't dessert, they are a small meal. The last one has basically nothing to do with a coffee cake, it's a dessert, which traditional coffee cakes aren't. ^^

When I was a really little kid, after church some days there was "cake and coffee" and it was all kinds of coffee cakes, muffins, breakfast pastry type things and coffee. That was kind of my exposure to there not being coffee in the coffee cake, they just go together!

I would say the last one is not a "coffee cake." It is dessert cake. A coffee cake, as in most church cookbooks, is made with sour cream. It is essentially a quick bread or snacking cake. Some add nuts, fruit, chocolate chips, or coconut. Rarely do they contain coffee.

As someone who is not an English native speaker for me coffee in coffee cake indicates flavour of the cake. I'm actually suprised to find out that it's just a name cause u eat it along with a cup of coffee. I found it strange you found coffee cakes with coffee in them. Usually there isn’t any in it- but it might be a regional or family thing? Like we always double the crumb topping. Loved the video! I love the voice over chats we get while you make the recipes.
