milk 24g
eggs 120g
light brown sugar 68g
dark brown sugar 100g
salt 1g
all purpose flour 83g
cocoa powder 17g
chopped dark chocolate (B) 50g
① Chop up the chocolate (B).
② Heat the butter at room temperature to make hazelnut butter.
③ When butter is 60°C(140℉), mix chocolate (A) and milk.
④ Beat in eggs and mix sugar and salt together.
⑥ Bring to a boil at 36 to 40℃(96.8℉~104℉), then whip.
⑦ Mix egg mixture and chocolate mixture.
⑧ Add the cinch powder and mix.
⑨ Mix in the chocolate (B).
⑩ Bake in an oven preheated to 180℃(356℉) for 160℃(320℉)/25~30 minutes.
📍 Storage method: Wrap fully cooled brownies in an airtight container.
If you can eat it within two days, keep it at cool room temperature away from direct sunlight.
If you think it will last more than two days, please keep it frozen (I recommend you eat it within two weeks.)
