I had about a cup of dried beans left in my bag of Bob’s Red Mill 13 Bean Soup Mix, but I decided that I needed to take a break from soups and chilies. So why not see how it would work as a base for hummus? Well, it was a revelation! All of the tender beans mixed together with tahini and everything else came together as a much creamier dip than a traditional chickpea hummus. Steve said that it was his favorite one I’ve made so far.
NOTES:
• Bean Choices: As I’ve mentioned previously, I have no brand loyalty here - I’ve simply been wanting try the Bob’s Red Mill (BRM) for a long time and finally decided to splurge on a bag. But you can use any bean mix you like or make your own mix using bulk beans from the grocery store. Just be mindful of which beans needs the longest cooking time. The longest cooking beans in this BRM mix are pinto, garbanzos, and kidneys which need 45 minutes to become tender.
• Tahini: Tahini is a smoothly ground roasted sesame seed paste. The good stuff (100% sesame seeds) has a natural tendency to separate (oils and solids) so make sure to stir well before using; or at least well enough to throw into a food processor. I used the Joyva brand in the video because it’s commonly sold in grocery stores near me. • Seasoning Choices: I’m in purge mode so I found this jar of Trader Joe’s Everything But The Bagel seasoning in the back of the pantry and have been going out of my way to use it up. You can leave that out completely to have a more traditional hummus flavor where the lemon and garlic shine through. Or you may have something else you want to mix in (harissa, za’atar, cumin & chipotle, or another blend you have).
• Toppings/Garnishes: It’s also pretty to top with some extra seasoning and a little drizzle of olive oil. A sprinkle of paprika and some toasted sesame are a good idea and so are bits of fresh parsley for that pop of green. Just don’t forget the olive oil!
• Dippers: My normal dippers for hummus are crispy pita chips (specifically Stacy’s Simply Naked), but the bag I had barely had any whole chips. Therefore, I made my own by cutting pita rounds into eight wedges, brushing with olive oil, dusting with more everything bagel seasoning, and baking at 375° for 15 minutes. Steve said that he liked them better than the Stacy’s; I don’t know about that, but they were darn tasty. Other good dippers are chopped veggies (carrots, celery, bell peppers, cucumbers, etc.) and pretty much any chip-type snack you prefer (tortilla chips, wheat thins, etc.).

Today’s Ingredients:
1 cup Bob’s Red Mill 13 Bean Soup Mix, sorted & rinsed, no soaking required
3 cups water
½ cup tahini
4 cloves garlic
2 TB lemon juice
1 tsp sea salt, more or less to your taste
1 tsp everything bagel seasoning, more or less to your taste (Trader Joe’s in the video)
2 TB extra virgin olive oil, plus extra for topping
¼ - ½ cup reserved cooking liquid (added little by little to achieve desired consistency)
Instructions:
1. Add the rinsed beans and 3 cups water to an unheated Instant Pot. Lock and seal the lid and cook on high for 45 minutes followed by a 15 minute natural pressure release. Then release any remaining pressure and reopen the lid.
2. Reserve ½ cup of the cooking liquid. Drain and discard the rest of the liquid.
3. While the beans are still quite warm add them to the food processor. Then add the tahini, garlic, lemon juice, sea salt, everything bagel seasoning, and olive oil. Blend/Purée until smooth, adding some of the cooking liquid a little at a time until reaches your desired consistency. [I added about ¼ cup extra liquid in the video.] Scrape down the sides of the processor along the way, if needed. Taste and adjust with extra salt or lemon juice as you go.
4. Serve immediately while still warm, or chill in the refrigerator for 2 hours. Top with a drizzle of olive oil and a sprinkle of everything bagel seasoning and dippers of your choice (pita chips, carrots, and celery in the video) and ENJOY!
