Kneading is a process of mixing the ingredients and developing the dough’s gluten structure. You have probably seen baker making dough using the heel of their hands to stretch and roll the dough. The no-knead process combines the ingredients in a bowl, mixes it with a spoon, then leaves it on the counter to proof for 12 to 24 hours during which Mother Nature does the kneading for you. I'm stuck in quarantine and this recipe has been an absolute god send. I am brand new to the world of bread, and after a miserable experience failing horribly at making baguette, this renewed my confidence and proved to me that I can bake good bread. The recipe turns out beautifully without fail every single time. Crackly crust, soft inside, and a delicious taste. I've been mixing in spelt and whole wheat flour with the white. When I eat a slice with some good wurst, it reminds me so much of what I used to eat for breakfast when I spent a summer in Munich back when I was a kid. You are a bread rock star!

Your videos are real clear and concise. I Thank You for putting these out there. Reading instructions can only get people so far. Seeing them done really opens the mind to these and other possibilities. I have not bought a loaf of any bread for the past year and a half. Making all my own whenever I need it is fun and relaxing at the same time. Keep up the good work.

Love your channel. Have baked many a loaf since I discovered it. I’m not much of a beer drinker so your recipe for beer bread gave me an excuse to use up four cans of lager that were left from our last bbq. But seeing as they are 473 ml cans, (15 Oz.)I tweaked the measurements of the dry ingredients In case anyone is interested they are as follows: 3 3/4 cups flour 1 3/4 tsp. salt. 1/2 tsp active yeast. Increased baking time by an extra 5 minutes. It turned out great by the way.

I agree completely. Steve has this amazing natural gift narration voice. Not a lot of people who are capable of it. Everything flows & the repeating helps to ingrain it into the brain.

Great recipe! Used" Anchor Steam " beer, excellent results, my method is different but works for me, I use a Lodge 5 qt. double dutch with a trivet or meat rack in the bottom, I then place the dough in a 8" skillet with the handle cut off, place in the heated dutch and bake for 45 mins. The trivet keeps the dough of the bottom for a thinner crust, dust the skillet with flour, no need for parchment.

Perfect!!! I made this dough last night and baked this afternoon. it was allowed to rise 12-14 hours. I forgot to take the lid off for the last 5-15 mins but it turned out perfect. Finally a white crusty bread recipe where there is the right amount of salt and not at all bland. I used organic white flour (Bobs Red Mill) and added 2 tsp vital wheat gluten to the flour. I cooked it in a larger sized cast iron dutch oven. This will be my go to recipe for Artisan white bread. Thanks so much Steve for clear and complete instructions. !! Now for the olive bread. Yum!

💗 2021-03-22 🍞🥖Steve Gamelin taught me to bake my own bread. I have been making them for almost three years, I mix with dried garlic powder, all kinds of dried herbs, curry, nuts, seeds etc. but also, cinnamon, honey or with extra sugar then you get sugar bread :-) No one makes bread so fast, simpel and much easier as 'Steve from no knead bread'. Love how a bottle of beer is the perfect amount of liquid, couldn't be easier. Have been making Jim Laheys wonderful no-knead bread for years but your video has inspired to vary it with beer. Amazing technique. I mistakenly used AP flour and it still turned out fantastic. Used a hopped cream ale. I winder if hops will increase the shelf life of the bread like it preserves beer. Oh well I won't know this time because I finished it all.

Really, AP is fine…especially if you use King Arthur AP. That’s because KAAPM is as strong as most other bread flours are. .. You will always get good results.

A wonderful use of KZitem, and such thoughtful instructions. After my first try (successful) with "White Wheat" flour and a pale ale, I am going to experiment with stout and later a smoked porter. I like the spoon-handle method and I am using an big oak dowel for better grip. Thanks!

I use the US Standard for my measuring cups and spoons, and I used a 12 oz fluid bottle of beer for this recipe. I don’t measure flour by weight because it varies depending on humidity, manufacture, etc. (it isn’t any more accurate than the measuring cup). Like those who knead bread... there is a feel to the dough. Steve

Thank you for putting this up. Had no bread flour or bread yeast but I was determined to give no knead a try. I used brewers yeast and Fosters and all purpose and the although rhe initial rise was a bit longer, the rise while baking in the oven brought it to size. It was a huge hit! Thank you.

I am fond of and interested in craft brewery beers and ales. I tried this with a mild tempered IPA, at about 25 maybe 30 on the International Bitterness Unit scale. Medium bitterness which sort of mimicked so aspects a sour dough. Next I try it with a Belgian sour beer or a salted goes, a beer style I have yet to try. I wonder what effect the sour beer might have on the flavour. Now I must buy more beer, for scientific and culinary purposes, of course. If one is in an area with a few craft breweries, the interesting possibilities are huge. Gives one cause to check out the craft beer offerings at the local grog shop. You certainly don't need often pricey craft beers but that is where you will find the greatest variety of flavour variations. A double IPA would probably be too hoppy, too bitter to be in most breads, might make an interesting pumpernickel. Or dark rye. 😎

I made my beer bred last night. I used 3 c of Bisquick, 3 tbl sugar and one 12 oz bottle of room temp beer. Mix, bake at 375 for one hour..... so yummy !. I also make an over night bread that doesn't contain beer. Both are no knead , with absolutely no extra flour, board or kneading of any kind. Both go directly from bowl to bread pan.

My mother, who was born in 19 09, baked bread my whole life. It would be coming out of the oven just when I got home from school. OMG! At school I would tear the crusts off my sandwiches and kids would fight over them. I didn't appreciate how special that was until I got older.

You’re right... I didn’t answer the question correctly. Self-rising flour use baking soda and baking power as leavening agents and you should not add yeast to self-rising flour. Quick bread-which uses self-rising flour-and yeasted bread are very different in nature. To understand the difference you may want to watch, “Introduction to No-Knead Beer Bread (a.k.a. Artisan Yeasted Beer Bread)” and “Introduction to Quick Beer Bread (The Muffin You Can Serve as a Dinner Roll)”. Steve

Hi Steve, thanks for your video. Tried your bread and it fell flat. Here’s what I used: 3 cups flour (2 cups whole wheat [11% protein]; 1 cup all-purpose [12%]) - note: both more than the “bread flour” or “pizza flour” sold at my super market both of which were under 11%. 1tsp sea salt ¼ tsp teaspoon dry yeast 330 mL bottle of the classic Kwak Belgian amber beer Proved overnight plus a few extra hours the next day - no more than 16 hours. Super super wet - hard to manage. Somehow folded it and got it back into the bowl for a second prove. Oven and Dutch oven fully preheated. Used baking paper for two reasons - super wet dough even after second proving; oil had burned on the inside of the Dutch oven which I had to clean before use. Popped it in at 230°C fan forced for 30 mins then an additional 7 with the lid off…. Flat and dense as anything. Tips?

I agree with the 3 minutes with the top off. I’ve made the same recipe that said to keep the bread in the oven with the top off for 15 minutes. Don’t do it. Your crust will be like a hockey puck.

Sourdough bread gets its distinct flavor from the airborne bacteria in your local climate. Thus, San Francisco sourdough has its distinct flavor and your sourdough will be distinct to your area. Likewise, beer bread gets its distinct flavor from the yeast, bacteria and other ingredients in the beer. It is not the same as sourdough, but using a good unfiltered hefeweizen will be very pleasing. One thing for sure, beer bread is a lot easier than making sourdough.

+Ninebreaker When I look upon his face, I see training and experience, probably military intelligence, high up on the Officer list, and possibly even Central Intelligence Agency! I could be wrong... To me, he looks a lot like *Steve Pieczenik* _(See Below - for explanation)_ Wouldn't you say he has that typical FBI hairstyle, that you would see back in the late 70's and 80's, with hair commonly combed and parted to the left! The Muscular face, from a life of heavy rigorous athletic training. I hope I look as fit as this man, if I reach this age, but I doubt it seriously... I've spent my life pretty much sitting on my bum! No regrets, except for some of the bad choices I've made in life, that I'm remorseful for, but must live with. If you Google his name, then go to images, you'll see the resemblance. We often take on the image of that which we have served the most... If you've seen one Government Agent, you've pretty much seen them all, because they all go through the same training, whether it's intelligence, or counter-intelligence, the resulting agent shares similar physical traits!

I wasn't insulting him, unless you're ashamed of the FBI; There are far too many other Agencies I hold to far less esteem, but the FBI isn't one of them that I complain about as much as I do the CIA. *Ted Gunderson* is my favorite FBI Agent, wish there were more men like him in Government. We're blessed that so many people are willing to defend and love this country despite the hatred against it poured out on us from every source from school to entertainment since the late 60's. What I should have done is thank him for spending decades putting himself daily in harm's way to protect and preserve our country. Know 2 kids graduating boot camp soon. Pride in kids like that especially for today's propagandised kids. Sorry I came across as negative and glad you said something. Whatever his back story is his vids are like a classroom and I really enjoy them. Made 3 recipes so far. Steve, I love your videos and have baked many loaves of bread after watching them. I always wondered about using beer instead of water in the recipe but, my questions is...since this is basically the same recipe as the no knead turbo bread, I have baked many times, except you substitute the beer for the water, why does it need to proof for 8 hours instead of the 1.5 hours, then 30 minutes with the turbo bread? Also, can't I make this in my oven without using a Dutch Oven like I do my other breads? I like your video on using an iron skillet to bake the bread in and that is what I use. It is wonderful. Baked at least 20 loaves this way and all were great!

Turbo proofs faster because it uses more yeast at a warmer temperature. And, recipes (ingredients) are independent of baking technique. You can use the ingredients from one recipe with the technique of another (baking vessel, time and temperature, etc.). You may want to go to my website (nokneadbreadcentral.com) for all the options.
