• Ingredients*
• For the chocolate cake*
Eggs - 3
Finely granulated sugar - 1 cup
Flavorless oil - 3/4 cup
Coffee flavoured milk - 1/2 cup( 1/2 cup milk + 1 tsp instant coffee)
Refined flour - 1.5 cup
Vanilla essence - 1 tsp
For the chocolate custard
Milk - 500 ml
Cornflour slurry- 4 tbsp cornflour+ 6 tbsp coffee flavoured milk.
Cocoa powder - 4 tbsp
Sugar - 1/2 cup
For decoration - cocoa powder/ sugar balls.
Method
• Preheat the oven to 180°C.
• Line an 8 inch baking pan with butter paper and grease it.
• Beat the eggs and sugar for 4 to 5 mins or until the mixture turns pale yellow and doubles up in volume.
• Add oil , milk and vanilla and incorporate well into the egg mixture.
• Now fold in the refined flour and baking powder.
• Pour the batter into the baking pan and bake the cake for 35 to 40 minutes or until the toothpick inserted into the cake comes out clean.
Chocolate custard preparation
• Heat a thick bottomed pan, pour milk into it.
• Add cocoa powder and sugar.
* Keep stirring continuously to avoid lump formation.
• Make a cornflour slurry with coffee flavoured milk.
• Add into the pan and stir continuously.
• Cook for 5 to 6 minutes.
• Switch off the flame when the mixture thickens.
• Put it aside to cool.
• Demould the cake when it comes to room temperature.
• Scrape off the cake crust and create a 2 inch deep well.
• Pour the custard into the well.
• Dust it with cocoa powder and sprinkle some sugar balls over it.
• Your jiggly wobbly Chocolate Well Cake is ready to relish.
