The first cheese you went for was burrata! It is sometimes also used a "dip" to scoop the creamy part with other accompaniments! Great video😊

The first cheese is a *Burrata* , the second is the *Ricotta* and the last one is *Pecorino* , probability is *Pecorino Canestrato* , that is a typical product of Basilicata. The salumi in the middle I think is a *Pezzente* , to the our left you have *Capocollo* and the last, as you rightly said, is *Pancetta* :)

The "round pretzels" at 1:23 are called "Taralli". They're very common in the south of Italy, i eat them almost everyday

No problem! Also, if you come again in Basilicata I suggest you to visit Pietrapertosa and Castelmezzano, they're two little mountain hamlets near each other. You can actually fly from one to the other through the "Volo dell'angelo": basically it's a 800 meter-high zip line between the two villages. Also check the ghost town of Craco, really evocative.

We just returned from 2 weeks in the Puglia region and stopped off in Matera for a few nights. We were pleasantly surprised. It was a different Italy than what we were use to but, we found it captivating. Love all your videos.

The second cold that Sam had was Bondiola. A food that we know very well in Argentina, where there is a large Italian community. And the first one was Longaniza, just one of many kinds of Salami that exist. It´s a little more spicy than the regular Salami. So beautiful views in this video: a city made of stone, a wonderful place. Ustedes sí que la pasan bien viajando por el mundo. No entiendo cómo no están más gordos comiendo tantas cosas ricas. ¡Jaja!

I thought you'd at least get marinated vegetables especially olives, if not some fresh raw ones, with the antipasto/antipasti also. I can see why Sam would need a long siesta after that. You ate a lot of rich very hard to digest food that required a lot of your energy to try to digest it which doesn't leave a lot of energy left over for other things. I wonder how often native Italians eat like that? The only semi-healthful thing was the soup and the eggplant without the cheese - although both of those were cooked which lessens the nutritive value.

@@sharroon7574 I think for thousands of years they only ate one meal per day at the end of the day. It wasn't until the early 1900s when the western world started pushing the idea that we "needed' three meals a day. If you look up culinary history for various countries, there really isn't much documented until the 1700s which also suggests "cooking" wasn't done often but instead, people ate to live and foraged and ate raw living plants rather than like today, people live to eat.

We italians tend to be just "a little" possessive and obsessive with our own recipes. Most of us simply don't get that we are a tiny country with a huge amount of very different and unique recipes. It's not unsual for a Italian not to know about some very italian recipe, so I really don't get all the commotion when a tourist don't know about some "common" italian dish. PS but yeah, pasta with ketchup or drinking capuccino while dining, I really don't I can ever accept any of that XD

I'm glad to see that you're enjoying the food there. I was stationed in Napoli for couple of years and I really miss the food there. I suggest the Tennis Hotel and restaurant in Pozzoulli just west of Napoli, good food and atmosphere!! And I hope you get to try the mozzarella di Buffalo with fresh tomatoes and basil, very delicious.

Would love to go back after seeing your video which brought back good memories. Unfortunately, not any time soon. After having real Italian foods there for awhile and then I went to an American hamburger restaurant, all I could taste was heavy salt and not the food itself. I can never enjoy American foods again like I do with real Italian foods there in Italy. They really like you guys if they offered you free lemoncellos!! Great drinks!!

Thas is BURRATA is the white one like a mozzarella but there are butter creme in mmmmmmm i love it!!! The last cheese i think is parmiggiano the hards are FORMAGGIO A PASTA DURA. The others soft like ricotta mozzarella burrata are formaggi a pasta blanda. Salumi ist a "conjunto" di salami, pancetta, lonza. I want to do your culinaire travel too!!!

I think someone will have written it already but I write just to help you enjoy the food; so bread guys.. bread (or breadsticks, crackers, taralli etc) when you eat cured meats and cheeses it takes something to help the palate to lighten the taste (and a well structured wine obviously), the burrata and ricotta are fresh cheeses (and perhaps an unaccustomed palate can eat without bread) but aged cheeses (Pecorino, Caciocavallo, Parmigiano etc) and salame, capocollo, pancetta are strong flavors and bread is essential to taste them, can try mature cheeses with honey and jams too (I don't know if it's a combination that is used in your country), the sweet and salty contrast is very good (in that case bread is not essential). Why not ask a hint to the waiter? he can certainly help, sry for my "Eng", I hope you can understand anyway... ciao and enjoy Italy. PS If I didn't understand anything (first time I see your video) and you are food expert forget and delete my comment. :-)
