Dear friends,
My fellow lovers of bread and everything dough-related, today I bring you a new recipe and dough method for pizza, focaccia, or delicious bread. Using yeast, I’ve chosen a quick method because summer is hot, and we don’t want to spend too much time in the kitchen. I'll also detail my method for making mozzarella and stracciatella clearly, along with a pesto sauce recipe.
For the dough, you will need:
450 ml (1 3/4 cups) warm water (if your kitchen is hot, use room temperature water)
6 g (0.2 oz) fresh yeast or 4 g (1 tsp) dry yeast
20 ml (1 1/2 tbsp) oil (any kind you have)
10 g (2 tsp) salt
550 g (4 1/2 cups) all-purpose flour
For the stracciatella, you will need:
1.5 l (6 1/3 cups) farm milk (unpasteurized, full-fat)
50 ml (3 1/2 tbsp) vinegar (apple, grape, rice vinegar - any kind as long as it’s colorless)
A pinch of salt
50 ml (3 1/2 tbsp) sweet cream or whipped cream
For pan-fried tomatoes:
200 g (7 oz) tomatoes (any kind you have)
A sprig of oregano
Salt to taste
For the pesto sauce, you will need:
100 g (2 cups) fresh basil leaves
30 g (1/4 cup) pine nuts (optional; you can use any nuts you like)
50 g (1/2 cup) finely grated Parmesan cheese
100 ml (1/2 cup) olive oil
3 cloves minced garlic
Salt and pepper to taste (add salt gradually as the cheese is salty)
1 tablespoon lemon juice (for a special taste and aroma)
Preparation Method:
You can use either an electric blender or a grinding stone.
Blend the Ingredients:
In a food processor, combine the basil leaves, toasted pine nuts, and minced garlic. Pulse until finely chopped.
Add the grated Parmesan cheese and pulse a few more times to combine.
Add the Olive Oil:
With the food processor running, slowly pour in the olive oil. Continue processing until the mixture is smooth and well blended.
If you prefer a thinner consistency, add a bit more olive oil.
Season to Taste:
Add salt and pepper to taste.
If desired, add the lemon juice for extra brightness and mix it in.
