Vincenzo you are so blessed to spend time with Nonna and learn the old ways of preparing and storing food. However a mandolin would keep the slices uniform and allow even salt and vinegar penetration. Adding the garlic and parsley genius. After you consume the tomatoes you can use the oil and garlic to prepare other dishes. The oil mixing with some herbs and vinegar also be used in making the panino or a vinaigrette for a salad using some of the pickles tomatoes in the salad. Maybe adding fresh ripe tomatoes in the salad to complement each other. Hope your baby and your wife are doing well.

What sort of applications do pickled green tomatoes have? They sound like they're delicious. I'm always nervous when it comes to sterilization of things, I'm always anxious. Most of the time I cheat where I am able, such as when I make stock I'll freeze the jar and thaw them when I need them since they keep for a long time and don't require a lot of effort, though with something like Mead I will do my best with scalding water and appropriate chems for sterilizing my space and tools and bottles since those will be sitting at room temperature for literal years. Some day I might be brave enough to can foods. Maybe if someone teaches me how to do it in-person, if I can find a class for it.

How long before they are good to eat? Myne have like 4 days, but taste really sour, from vinegar
@vincenzosplate
Жыл бұрын
Ah, the sour taste might be due to too much vinegar. For marinated veggies, it's best to let them sit for at least a few hours to absorb flavors but not much longer. Try reducing the vinegar or balancing it with other ingredients like olive oil, herbs, and spices. Enjoy your veggies at their tastiest! 🥗👨🍳🍽️

❤ Nonna ❤ why do people not have the common sense and wisdom like Nonna anymore? "You don't like it, you don't eat it". 🤣 Could you use Green Tomatillos in place of the green tomatoes? Agreed, eat the garlic! 👍

Absolutely, Nonna's wisdom is timeless! While tomatillos have a slightly different flavor, they could work. And yes, garlic is a must! 🧄🍅 Grazie for sharing your thoughts!
