Ingredients:
Buck Wheat Noodles or any Ramen noodles
Sesame oil
Steps:
Cook noodles according to the package directions.
Put them into cold water right away to prevent over cooking, and keep it chilled.
Then drain it well and toss with some sesame oil and set aside.
Egg Omelet:
2 eggs
Pinch of salt
1 Tbsp of MIRIM cooking wine
Steps:
Mix everything and whisk well.
In a pan, add some oil and pour the egg mixture. Cook a few minutes on medium heat on each side to make egg omelet.
On a cutting board, cut it in half, and then cut into thin strips.
Optional: It can be replaced with boiled eggs.
Vegetables/meats:
2 cucumbers, julienned
1-2 tomatoes, thinly sliced
4 -6 slices of ham, thin strips
4 imitation crabs, thin strips
Some cooked shrimps
Some Radish sprouts
Some chopped green onions
Optional:
Some cooked chicken breast strips
Sesame Dressing:
1 cup of soy sauce
1 cup of sugar
½ cup of vinegar
½ cup of sesame oil
½ cup of sesame seeds
2 teaspoons of minced fresh ginger
1 fresh lemon Juice
1 teaspoon Japanese Mustard
Steps:
Mix everything and whisk well. Chill in the refrigerator for 30 minutes. Dressing can be stored in the refrigerator for a few weeks.
Japanese Cold noodle:
Steps:
On a plate, put noodles in the middle and all the vegetables and meats all around noodles, Drizzle the Sesame Dressing on top of the noodles and vegetables.
Garnish with radish sprouts and shrimps in the middle of the noodles.
