IMO, I don't think he has fungal infection. His skin is peeling and nails discolored and peeling because he handles massive amount of fishes everyday, cleaning, cooking, moving, slicing, deboning them in moist condition and its hardwork. People in developed countries don't often see the rough hands of dishwashers, farmers, and fishermen for example. Of course, he has a choice to wear gloves and for reasons of efficiency he chose not to. Give him a break from your opinions.

伟生何 This is Japan. A developed country. Are you stupid? We say it is a fungal infection because many of us in fact do know. Chefs, fisherman (plenty in developed countries) aquatic pet enthusiasts and sellers, bartenders, they all deal with the same issue.

Sure, I accept that based on your experience you can argue that it is fungal infection but I am making mine based on my experience. I am saying that it is possible that hardworking individuals that work in moist conditions and choosing not to wear protective gloves can develop those hands in question. You do not have to call me stupid as it proves how narrow-minded you are. Unless of course, you are a medical specialist that has physically examined and tested those hands in question. If it has karmic weight from a previous life it may need to be a fish a few times. If it has positive karma or has finally she'd it's karmic debt it could be born as another more advanced animal, including human. If you believe in that sort of thing.

If Americans knew how good real aged artisan shoyu was, as opposed to the typical brands of mass produced shoyu we generally see on the shelves of our stores, they would use a lot more of it. I recently have been researching shoyu of Japan and went to the one Japanese grocery store in our region and bought several different brands to try. Boy was that an awakening. Such amazing flavors and so different from each other. Many had great depth of flavor vs saltiness that really enhanced my foods- whereas the mass produced American brands were like adding extremely salty liquid that ruined the food.

Sorry that people find someone who handles the raw fish, and then serves you this same raw fish, should take care of his hands better. You know it's not like its the man's livelihood or anything. Oh wait it is. When you have something that wrong with your hands that it's turning your skin RED AND PURPLE at the nail, you need to have it checked out. The mans left hand was RED and i'm not talking about before he washed the blood off. I'm talking about after, when he was skinning and then turning the fillets into strips. If it was still blood on his hands, it would have come off from the fish rubbing on it, and have changed the color of the touching flesh, it did not. Disregarding the fungus clearly eatting that man's thumbnail, the massive ridge and lines running down it are a sign of poor bloodflow, and damage to the nailbed.

If you see two blue fishes seem similar, just look at the mouth. It has teeth, it is Tusk fish It has beak (large tooth), it is Parrot fish.

I am watching just for fun. I probably won't eat too much Japanese food too much deep frying, coating, sauce, etc. I prefer to taste the fish with simple herbs garnishes not overdoing it.

Why does he even bother scaling the fish? He doesn't rinse the scales off the working surface and scales get into the area he is fileting. I've watched this guy over the years and his goal now is speed, even if it means leaving a good portion of meat behind. That said, I love watching this guy work.
