These fish are favorite here in Hawai'i, so good that you rarely if ever seen it in the market, the fishermen keeping these for themselves. We call then locally "Nabeta" which is a Japanese name used more so than it's Hawaiian name "Laenihi". One of the things we LOVE about this fish is it's very soft scales which we consider a delicasy so we NEVER scaled these fish but we fry them up scales and all eating the scales along with the skin and flesh which is very soft and tender. I was very surprised to see the fish on this video being scaled. Very interesting video as usual. Thank you very much!

It's a bit rare to catch em shoreline fishing. They tend to hang out in deeper water. Most of the people I talk to who have caught before usually go kayak fishing.

Can confirm the skin/scale part. In some coastal city in Vietnam this fish is widely loved and their skin is part of the reasons. A quick Google with the name we call this fish just resulting in translation into “parrot fish” though (which doesn’t look like the case). Back in the day the fish this size are not hard to find in my hometown but nowadays we often end up with fish that are 2 or 3 finger large at the markets.

That is my favorite fish in the ocean! I believe they call this fish nabeta. This is one of the few fishes with large edible scales, sad to see that you didn't get to try the scales, deep fried the scales taste like crispy chips. Very prized fish among fishermen.

Chef, this is a very cruel presentation. You have reached a sort of Nirvana of natural fish preparation which has literally left me contending with drool. I very simply will anticipate reaching your restaurant, or you personally, to have the good fortune to experience these dishes. I'm almost out of words for the honor that is paid to this animal. The amount of care and study demonstrated simply does not exist on my continent. I would thank you profusely, but somehow you and a highly skilled cameraman have been able to capture everything - absolutely everything wonderful and delicious about this preparation, then left me with no bite! meunière, Karaage (唐揚げ), and Nitsuke (煮つけ). the last one is pretty easy. you need only soy sauce, sake, and sugar. ginger is optional
