(甜绿豆馅红龟糕)
馅料 / filling
绿豆瓣150克 【浸泡4小时或者浸泡隔夜, 蒸大约45分钟】
150 grams of mung bean. [Soak for 4 hours or overnight, and steamed for about 45 mins]
60-80 克糖粉 / 60-80g icing sugar
2汤匙食油 / 2 tbsp of cooking oil
少许盐巴 /pinch of salts
10克红葱头 / 10g shallots
5-6片斑斓叶 / 5-6 pcs of pandan leave
皮 / skin
糯米粉 250克 / 250g glutinous rice flour
木薯粉30克 / 30g Tapioca flour
1汤匙 食油 / 1tbsp of cooking oil
1汤匙幼糖 / 1 tbsp castor sugar
适量甜菜根汁【大约10汤匙】 / beetroot juice [ around 10 tbsp]
适量滚水【大约1杯半】/ Appropriate amount of boiling water [about 1 1/2 cups ]

➡️ Filling 馅料 25gms/25克
*绿豆馅料可以早一两天做好,收藏在冰箱。
*The mung bean filling can be made early a day and stored in the refrigerator.

用甜菜根汁的天然红色素来制作外皮。
*甜菜根汁:把甜菜根和清水搅拌至细腻,然后滤出甜菜根汁。
Use the natural red pigment from beetroot juice to make “angku cake” skin.
*Beetroot juice: Blend beetroot with water until smooth, then strain out the beetroot juice.
红龟粿是传统的华人庆典或祭祀糕点,满月、生日、祭拜祖先、供奉神明、结婚等等都会看得到。
Ang Ku Kueh is a traditional Chinese celebration or sacrificial cake. It can be seen on full moons, birthdays, worshiping ancestors, worshiping gods, marriages, etc.
