Mango Ginger Dipping Sauce:
•1/2 teaspoon ginger, skin peeled and grated or 1 tsp ground ginger
•1 lime
1 tsp rice vinegar
•chili paste to taste, add small amounts and taste. You can always
•1/2 teaspoon salt, add more as necessary

At this stage, add more maple syrup if it needs sweetening, more lime if it needs to be thinned out or chili paste to spice it up some more.
