私、清水康生の故郷、和歌山県串本町に帰省しています。
今日はセ・ラ・セゾン!和歌山串本養春店と
お世話になっているポンカン農園を紹介します。
セ・ラ・セゾン!で使っているポンカンを栽培している四季彩園の竹田さんご夫妻です。
竹田さんの農園は、串本町の重畳山にあります。農園からは熊野灘が一望できます。
弘法大師が開いたと伝えられている神仏習合の霊山で、
山には重山神社と弘法大師開基の神王寺そして100体の石仏が並んでいます。
地元では遠足や家族のハイキングに人気のスポットです。
私も子供のころカブトムシ捕りなどをして遊んでいました。デートにもいいですよ!
重畳山は1964年に山火事で1週間燃え続け、樹木が燃えつきてしまいました。
その土地を利用して、パイロット事業として20数件の農家さんによるポンカン栽培が始まりました。
竹田さんは、2005年にこの農園を買い取り、ポンカン栽培を始めました。
竹田さんのポンカンは3つ星レストランでも使われています。
竹田さんは、おいしくて安心安全なポンカンを作るために、試行錯誤をして、農薬を減らし続け、遂に、5年前から完全に化学肥料、除草剤不使用、無農薬、自家製堆肥による有機栽培をしています。
この地、東牟婁郡で唯一の特別栽培農産物の認証を受けています。
安心安全においては、近くの米どころ那智勝浦町大田からもみ殻、向かいの大島樫野から伊勢えびの殻、セ・ラ・セゾン!などのケーキ店から出される卵の殻とポンカンの剪定した枝をチップにし、年2回有機肥料を作ります。
また、除草剤を使わずに、3月から10月まで、年8回に分けて雑草を刈ってそれを土の上においておきます。 それが土に返り、肥料になります。
おいしさにおいては、味の深さ、そして糖味と酸味の比率を大切にしています。
また、海の潮風が農園に吹き、潮風のミネラルがポンカンを更に美味しくしています。
竹田さんの農園は南向きで日当たりがいいので、他の農園より早く収穫できます。
今、ポンカン農園を悩ませているのが、獣害対策です。以前、猪が農園を荒らした時は、1mの高さの金網で農園を囲って対策しましたが、鹿は、その高さでは柵を超えて入ってきてしまうので、ポンカンの幹の皮をはがされ、何十本もダメになってしまいました。
どのように被害を防ぐかがこれからの課題です。
ポンカンの収穫は12月から1月中旬頃までです。
今がまさにポンカンのおいしい季節です。
通常ポンカンは1週間ほど熟成させてから食べると甘みが増し味の深みも出て
さらに美味しくなります。
でも、今日はもぎたてをいただきます。
はじける果汁、生き生きとした若々しい香り、甘みも十分です。
もぎたてはここでしか食べられない贅沢な瞬間です。
コラボ企画、ぽんかん収穫体験&お菓子教室も開催しています。
来年は開催できるように楽しみにしています。
Today, I will introduce Cest la Saison, Wakayama Kushimoto Yoshun shop and a Ponkan orange farm I have a deal with.
This is Mr. and Mrs. Takeda, the owner of the Ponkan farm called Shikisaien. We use their Ponkan oranges for our cakes.
Mr. and Mrs. Takeda's farm is located in Mt. Kasane. The farm overlooks Kumano sea.
It is the spiritual mountain of syncretism of Shintoism and Buddhism. There are Shinno-ji temple which was founded by Kobodaishi, the founder of a religious sect, and Kasaneyama shrine in the mountain. Also 100 small stone Buddha statues are lined in the approach to the temple and shrine.
Local people enjoy hiking and excursions. Couples go there for dating. I used to play in the mountain, such as Beatle catching.
Mr. and Mrs. Takeda bought this farm and took up Ponkan farming in 2005.
Mr. and Mrs. Takeda's Ponkan oranges are used at three star restaurants.
In order to supply safe and delicious Ponkan oranges, Mr. and Mrs. Takeda had reduced chemicals by trial and error. Five years ago, they finally succeed in organic farming. They use homemade compost and grow Ponkans organically, avoiding pesticides and chemicals.
Here in Higashimuro district, Mr. and Mrs. Takeda's Ponkan oranges are the only specially cultivated agricultural product.
Regarding food safety, they make their own organic fertilizer two times a year. It contains rice husk from nearby major rice-producing town, Nachi Katsuura Oota, Ise lobster shells from the town opposite, Ooshima Kashino, egg shells from cake shops such as Cest la Saison and chipped pruned branches of Ponkan orange trees.
Also, instead of using pesticides, they lay mowed weeds on the farm eight times a year from March to October. The weeds return to the soil and fertilize the farm.
Regarding deliciousness, Mr. and Mrs. Takeda place great importance on richness in taste and a balance between sweetness and sourness. The sea breeze from Kumano sea brings mineral to the farm. This mineral enhances the taste and flavour of Ponkan oranges. As their farm faces south and gets plenty of sunshine, they can harvest Ponkan oranges earlier than other farms in the area.
Ponkan orange harvest season is between December and the mid of January. They are in season now!
Generally, Ponkan oranges get sweeter and richer in taste if you keep Ponkan oranges in the storage for one week after picking up. But, I will have the freshly picked Ponkan orange today. The juice and the fresh scent spread throughout my mouth.
You can experience a luxurious moment here to have such a delicious freshly picked Ponkan oranges.
