苦瓜炒牛展:
材料:
苦瓜1個
急凍牛展1隻
薑1舊
蒜頭幾粒
辣椒仔1隻
豆豉1湯匙
蔥1條
處理:
1. 牛展,放室溫15分鐘解凍。
2. 小心切一片片,清水浸軟。
3. 清水沖淨牛展,擎乾水。
4. 豆豉,清水浸1分鐘。
蒜頭,去皮,洗淨,切片。
蔥,切段。
辣椒仔,切粒。
薑,去皮,洗淨。
5. 洗淨砧板。
6. 切幾片薑。
7. 豆豉,倒去水分,沖洗乾淨,放砧板上,切碎。
8. 苦瓜,1開2,刮去囊,切條狀。
9. 放苦瓜在大碗中,加入鹽,加少量水分,大力揸出苦澀味。
10. 苦瓜,沖洗乾淨,壓乾水分。
11. 牛展調味:
a. 生粉1茶匙,攪勻
b. 油1茶匙
c. 蠔油1湯匙,攪勻
醃20分鐘。
烹調:
1. 苦瓜,白鑊用大火在鑊中烘乾,大概6分鐘就會烘乾。
2. 洗乾淨鑊。
3. 加入50毫升水。
4. 大火燒熱鑊。
5. 放牛展,加入油1湯匙。
6. 加入蔥、薑和豆豉一同爆香,兜炒一下。
7. 放苦瓜兜炒。
8. 加入3茶匙糖及20毫升水,炒勻。
9. 上碟。
Stir frying beef shin with bitter melon:
Ingredients:
Bitter melon 1 No.
Frozen beef shin 1 No.
Ginger 1 No.
Garlics several Nos.
Chili 1 No.
Preserved beans 1 tbsp
Green onion 1 No.
Preparation:
1. Beef shin, defrost at room temperature for 15 minutes.
2. Slice it carefully. Defrost with tap water.
3. Rinse beef shin thoroughly. Hang dry.
4. Preserved beans, soak in water for 1 minute.
Garlics, peel, rinse and slice.
Green onion, cut in lengths.
Chili, dice in cubes.
Ginger, peel and rinse.
5. Rinse the chopping board.
6. Cut several slices of ginger.
7. Preserved beans, pour away water, rinse. Put on chopping board, chop well.
8. Bitter melon, divide it into 2 shares, remove seeds, then slice it.
9. Put bitter melon in a big bowl. Add little salt and water, squeeze the bitter taste from bitter melon.
10. Bitter melon, rinse thoroughly, and squeeze it.
11. Season the beef shin:
a. Tapioca starch 1 tsp, mix well.
b. Oil 1 tsp
c. Oyster sauce 1 tbsp, mix well.
Season for 20 minutes.
Steps:
1. Bitter melon, dry it up in wok with no oil. It takes about 6 minutes, and it will be dried up.
2. Rinse the wok.
3. Add 50ml water.
4. Heat up the wok at high flame.
5. Put beef shin and oil 1 tbsp.
6. Fry green onion, ginger and preserved beans well.
7. Put bitter melon.
8. Add sugar 3 tsp and water 20ml. Fry well.
9. Serve.
