Karashi Renkon (辛子蓮根) is a popular regional dish on the island of Kyushu in Japan. A mixture of miso and Japanese karashi hot mustard is stuffed in lotus root, coated in turmeric flour batter, and deep-fried until a crispy crust forms.

Ingredients:
1 lotus root (renkon) (6 inch, 15 cm)
1 tsp rice vinegar
3 cups neutral flavor oil (vegetable, canola, etc) (700 ml)
- Japanese Mustard Miso -
2 tsp Japanese karashi hot mustard (1 tsp for less mustard taste)
1 Tbsp warm water
5 Tbsp panko (Japanese breadcrumbs) (20 g)
1 Tbsp mirin
1 Tbsp granulated sugar
5 Tbsp miso (100 g) (Preferably white miso for sweet & mild taste)
- Batter -
1 large egg
1 cup all-purpose flour (120 g)
1 Tbsp turmeric powder
¼ tsp kosher salt
½ cup water (120 ml)
