The tradition of buying breads from local bakers called kandurs is very old in Kashmir. Their tandoors (clay ovens) are a place where people discuss politics, gossip, and even try to find a match for their children. There are many types of Kashmiri breads like tzchot, lavasa, girda, kulcha, sheermal, makaivour, bakerkhwani and others. People prefer to buy breads from kandur as they are fresh. A girda or lavasa with the salty noon chai is a breakfast every Kashmiri can afford.
