Serve - 4 people
Ingredients:
Baingan/Brinjal/Aubergine - 500gm (washed and soaked in salt water to avoid oxidation)
Tej Patta - 1
Jeera / Cumin - ½ tsp
Laung / Clove - 3
Chotti elaichi - Green cardamom - 2 crushed
Moti elaichi / Black cardamom - 1 crushed
Dalchini / Cinamom stick - 1 medium
Asafetida -1/4th tsp
Kashmiri Red chilli powder - 2 tbs
Sunth / Ginger powder - 1/4th tsp
Dhania / Corriander powder - ½ tsp
Dalchini / Cinnamon Powder - 1/4th tsp
Saunf / Fennel Powder - ½ tsp
Garam masala - ½ tsp
Whole green chilli - 3-4
Salt to taste
30 - 40 gm of tamrind soaked in 2 cups of lukewarm water(we will only use 1.5 cups)
Oil for frying
