I love that he thoroughly seasons the meat and everything else. Also he deglazed his pan with water, thats a pro move, don't throw away flavor . I love watching him cook, he looks so energetic and fun! I don't understand Japanese but I can tell he's an awesome cook.

I hope this chef knows and realizes how much joy and happiness he brings to people just by his genuine passion, joy and positivity. Always makes me smile every time I watch a video of his or when he's featured on other channels. I hope to visit his shop one day, not only to try his amazing food, but also witness the process live.

hi the heat its ventilated away. and if its winter, its a huge advantage by reducing ventilation. either way ventilation is much preferred so his place wont stick with smells.

Actually you don't feel much heat from the chef jacket, unless you are expose to heat for long time then yes. Kitchen are equiped with exhaust fans/vent.
I hope that one day a fan will make good subtitles for the videos :3

I want to do it, though I doubt it'll make me a celebrity, haha. It's a hard one to sub cause men talk faster and mumble more and his voice is often drowned out by the noises he makes in the kitchen, but it's going to be a fun challenge.@@bangkokbanks

His flow in the kitchen is awesome, i have studied under the Japanese for sushi and yakitori. I have been doing this for almost 6 years now, I am by no means any expert, but from how my senpai(s) taught me, this is the heart of how to cook Japanese. Nothing is special, it's very basic, the trick is knowing how to execute everything perfectly, not for you, but for the food. Well done, love the vids, keep making more! Gunbatte yo!

I appreciate the added english and I really liked the technique for peeling the tomatoes. Used to normally seeing them blanched in water instead, the torch was nice and quick.

not that unsual i also saw doing it in a deep frier but if u want it really fast and doesnt have a torch u can just cut the tomato in 4 than run the knife under the skin like you would do to remove the skin of a fish

You can also just poke a fork in it and turn it around the stove for a bit. No need for a fancy torch, but the same slightly burnt tinge will be there.

I really enjoy watching this man cook! It makes me wish I understood Japanese though because those auto translated subtitles are sometimes humorous, but so very very NOT what he's saying. Still, this was a fun video to watch. Thanks for sharing it

In Sicily we do a more refined and complex version of that aubergine tomato mix. We cut in little squares aubergine fried slices, mix it with fried pepperoni (red/yellow), add tomato (sauce or little squares) add crushed almonds (or pinoli), salt, Pepper, olive oil and vinegar to cook the mixture, to give it the bit of acidity it need. Add a bit of sugar too and thats it: its called caponata (or caponatina) and its one of the most famous sicilians side dish.

I noticed he uses Matfer Bourgeat carbon steel pans and Glestain slicer and gyuto chef knifes which is a mark of cook/chef who knows his craft. I have one Glestain 270mm gyuto knife and four Matfer black carbon pans and use them quite a lot at home.

Lovely! I can learn to cook like a chef... here's the basic ingredients for the sauce in English, the rest is pretty self explanatory. Dashi (stock) 60cc Shyoga (ginger) 10g Kitou (sugar) 3g Salt (little bit) shoyu (soy sauce) 10cc
