Traditional southern German red cabbage salad. Easy to make, only 7 ingredients, tasty and even better the next day. Perfect for a potluck or a grill party.
Ingredients:

1 head of red cabbage
2-3tbs apple cider vinegar (red wine, white wine or distilled vinegar ok)
2 tsp salt (to taste)
1 tsp sugar
1-2 tsp ground caraway seeds
1 tsp black pepper
2 tbs neutral oil (canola, avocado, sunflower - all good)
Method:

Quarter or 1/8th the cabbage. Remove the stem and slice into 1/4 inch strips. Blanch using boiling water for 15 to 30 seconds. Drain.
Add vinegar, salt, sugar, pepper, caraway and after mixing and letting rest for a while so the salt can extract some juices, add enough oil to get a nice shine.
That's it. Store in fridge for up to a week - I bet you it won't last 2 days before it's gone...
