Ingredients
- Koji: 200g
- Hot water (50-60°C): 1.2L
- Sake lees: 200g
(Topping per serving)
- Kinako: 12g
- Black sesame: 1 tablespoon
Instructions
1. Put the koji into hot water (50-60°C).
2. Keep it at 55°C for 8 hours to ferment.
- **Tip**: Using a heater makes it easy to manage the temperature and heating time.
3. Put the fermented koji and sake lees into a storage container and blend with a hand blender.
4. Pour about 200cc of the blended mixture into a glass and top with black sesame and kinako.
