Firstly, as a Canadian of Korean ancestry thank you for making a recipe with a nod to my ancestry and Korean ingredients like gochujang. Secondly, I think it's important to clarify that these are Korean flavour inspired. Meatballs are not a part of Korean cuisine, nor is plum jam. This is not criticism, but just feedback to avoid confusion from subscribers. These look yummy.

I recommend 85% lean/15% fat ground beef for best result. Too lean and you risk meatballs drying out.

You can use apricot jam or hoisin sauce. If you use hoisin sauce it will be a very strong flavour 😊

My mouth was watering watching this -- then you threw in that Korean Spice Paste -- no such animal on my island -- no plum jam either (any ideas for substitution?). Also, thanks for the tip re using white vinegar in the absence of rice wine vinegar (never knew that).

Hey Jo! Like Ray said, Miso is a great substitute. You can also use sriracha sauce which is bit more spicy or Thai chilli paste but these are going to change the flavours a lot. As for the jam, you can use apricot jam or hoisin sauce but again using hoisin sauce is going to change the profiles a lot. Either way, it will still be very tasty 😋

Nor do we have Sriraco sause or Miso, But we DO have apricot jam (yay). Please would you be so kind as to tell me how the ratio of Soy Sauce to Chilli Sauce - or is it half and half? The ginger and onion flavors marry perfectly and these are very tender meatballs.. I ate mine with side of rice and used the left over sauce in rice as leftovers the next day.

I’d say no. They mainly use nut, sunflower, canola and vegetable oil but due to the fact that I always use olive, I decided to use it.
