I'm making this today. I don't have Agar Agar on hand, so I'm substituting with gelatin powder. The internet recommended a 3 to 1 ratio of gelatin for agar. 3 teaspoons of gelatin for every 1 teaspoon of agar. Will let y'all know how it turns out. Also, I used more dates like he recommended.

I love pears! Here in Pakistan we get super green crunchy ones and the taste and texture is exactly as you described. Never thought of pairing them with dates and cinnamon before. Will definitely try it out

I came here from your TikTok, you should look into extracting pectin (a natural thickener) from the cores and skins that way they are put to use instead of just being thrown away.

You mentioned it tastes like Korean Cinnamon Chinese Date Tea. I can't find anything about that online. If you had a good recipe, I'd love to try and make it.

That secondary heat source thing in the pan is awesome ive never seen that technique. Does it only work with high heat capacity stuff like cast iron? What else do u use that technique for if u do? i love it

I love to use a silicon mat instead because it maintains a great constant temperature. This technique is great for an oven that has shitty heating from the lower half (lol mine) or when you want to cook something evenly on the top and bottom eg. Any pastry or sweet
