🎵 Altari Kimchi.
✨Ingredients (1 cup = paper cup, 1T = rice spoon)
3 layers of Altari, 200g of chives, 3~4T of sesame seeds, 200ml of mineral water
Pickled - 1.5L of water, 0.5L of hot water, 1 cup of sea salt + ½ cup
Glutinous rice paste - 600ml water, 2T (30g) glutinous rice flour
Seasoning - 250g red pepper powder, 150g garlic, 1½T ginger paste, 2T (35g) wheat syrup, 85g sea salt, a pinch of Miwon (1/8T)

📢 Altari Kimchi.
1. Trim and wash Altarimu.
2. Add 1.5L of water, 0.5L of boiling water, and 1 cup of sea salt to make brine.
3. Put altarimu in salt water, sprinkle 1/2 cup of sea salt on the radish and marinate for 2 hours.
+ Flip after 1 hour.
4. Add 600ml of water and 2T of glutinous rice flour, mix, and boil over high heat while stirring until thickened.
+ Cool to room temperature.
5. Add 250g red pepper powder, 1T minced ginger, 150g minced garlic, 85g sea salt, 2T grain syrup, grass, and a pinch of miwon and mix to make seasoning.
6. Rinse the pickled radish.
7. Cut chives in half and season with seasoning.
8. Season the Altarimu.
+ Use all of the 2T seasoning left over.
9. Add 3-4T sesame seeds and mix.
10. Put it in a barrel.
11. Add the remaining seasoning, 2T of leftover seasoning, and 200ml of mineral water in the uncooked container, rinse thoroughly, and pour into the container containing Altari.
12. Cook the kimchi at room temperature to fit your mouth and store it in the refrigerator.
