Kottu Paratha (serves 4-5)
Ingredients:
1/2 cup yogurt
1 tbsp ginger garlic paste
1 tbsp curry powder
1/4 tsp turmeric powder
1 tsp garam masala powder
1/2 tsp salt (as rq)
500g boneless chicken
3-4 tbsp coconut oil or any oil
1 tbsp chopped curry leaves
1-2 chopped green chilies (as rq)
200g chopped onion
1 tsp red chili powder (as rq)
1 tsp cumin powder
1/2 tsp turmeric powder
1 medium (100g) tomato sliced
1/4 - 1/2 tsp salt (as rq)
2 eggs
4-5 parathas chopped
1 tsp crushed pepper
1/2 tsp garam masala powder
chopped coriander leaves
For Serving: chopped onion, tomato and lemon if you wish.
Procedure:
1- In a bowl, add 1/2 cup yogurt, 1 tbsp ginger garlic paste, 1 tbsp curry powder, 1/4 tsp turmeric powder,1 tsp garam masala powder, and 1/2 tsp salt (as rq). Add 500g boneless chicken and mix well. Marinate it for 2-3 hours or overnight.
2- Transfer it to a pot. Cover and cook it until done but don't make it too dry. Mix, shred and keep it aside.
3- In a pot, add 3-4 tbsp coconut oil or any oil and 1 tbsp chopped curry leaves. Fry. Add 1-2 chopped green chilies (as rq). Fry. Add 200g chopped onion. Fry until it is golden brown.
4- Add 1 tsp red chili powder (as rq), 1 tsp cumin powder, and 1/2 tsp turmeric powder. Fry. Add 1 medium (100g) tomato sliced. Mix. Add a little water. Mix, cover, and cook until it becomes soft.
5- Mix a little. Add 1/4 - 1/2 tsp salt (as rq). Fry until oil loosens. Add 2 eggs and scramble it.
6- Add 4-5 parathas chopped (chop fine if you want). Mix well. Add shredded chicken. Mix well.
7- Add 1 tsp crushed pepper, 1/2 tsp garam masala powder, and chopped coriander leaves. Mix well. Cover and cook for 2-3 mins. Don't make it too dry.
8- It's done! Serve it with chopped onion, tomato and lemon if you wish.
