Ridge Gourd in Coconut Gravy (Serves 4-5)
Ingredients:
1 cup grated coconut
1 tbsp sesame seeds
10 cashews soaked with water
coconut oil
1 tsp mustard seeds
1-2 tsp cumin (as rq.)
curry leaves
1 big onion
2 medium tomatoes
water
1/4 tsp turmeric powder
1 tbsp red chilli powder (as rq)
1/2 kg chopped ridge gourd
1 tsp salt
garam masala powder (opt)
coriander leaves (opt)
Procedure:
In a blender, add 1 cup grated coconut, 1 tbsp sesame seeds. Crush.
Add 10 cashews soaked with water. Blend into a fine paste.
In a pot, add some coconut oil and 1 tsp mustard seeds. Let it splutter.
Add 1-2 tsp cumin (as rq.) Fry. Add some curry leaves and fry.
Add 1 big onion, finely chopped. Fry. Add 2 medium tomatoes, chopped. Fry.
Add some water (if rq.) and cook for 2-3 mins. Fry till soft.
Add 1/4 tsp turmeric powder. 1 tbsp red chilli powder (as rq). Fry.
Add 1/2 kg chopped ridge gourd, 1 tsp salt. Mix, cover and cook until done. Keep mixing from time to time.
Add the blended coconut mix. Mix.
Add some water to make the desired consistency. Mix, cover and cook till it boils. Add salt (if rq). You can also add garam masala powder and coriander leaves if you want.
It's done! Serve with rice or roti and enjoy!
