Ingredients:
Soya chunks 100 grams
Garlic gloves 15-20
Green chillies 4-5
Carrot: 2 small
Potato : 3 medium size
Oil: 250-500 grams
Corn flour powder: 6-7 table spoons
Bread slices: 6-7
Detailed recipe for Crispy Soya Cutlets:
Take 100grams Or 1 medium bowl of soya chunks. Boil 3-4 glass of water and soak the soya chunks in hit water for 30 mins to 1 hrs. in the meantime boil 3 medium-sized potatoes with half a glass of water pinch of salt in a cooker and make 2 whistles of the cooker. Peel 15-20 small garlic cloves and grate them. Take 1 inch of ginger and grate it. finely chop 4-5 green chilies and 2 small carrots, potatoes are also boiled, now grate them as well. Then wash soya chunks thoroughly for 4-5 times with cold water until you get clean water. Then squeeze out all the water from soya chunks and add small quantities to a mixer jar and grind coarsely.
Add all ground soya chunks mixture to a bowl. Then add finely chopped green chilies, Grated ginger, and 1 grated garlic clove to the coarsely ground soya chunk mixture. Add half a teaspoon of turmeric powder and 1-2 spoons of red chili powder. 1 teaspoon of roasted cumin powder and half a tablespoon salt. mix the spices well then add grated carrot and grated boiled potatoes and mix it very well. Then add 2-3 spoons of corn flour powder for binding. Taste it and add salt if required as per taste. Then make small balls of the mixture and flatten them in the form of a tikki. Once all tikki are made, then to a bowl add 2-3 spoons of corn flour powder and a little water to make a thin slurry out of it.
Then for the coating, we will use bread crumbs. Toast 3-4 bread slices on a pan, then add small pieces of it to a mixer jar and grind coarsely. You can use oats or cornflake powder as well.
Now dip soya chunk tikki one by one in the corn flour slurry and then cover it with bread crumbs. Once all tikki are ready with coating. Then heat a kadhai and add 500 grams of oil heat it on high flame for 2 mins add a bread crumb to the oil if it starts floating immediately that means the oil is at the right temperature. Now add 2-3 soya tikki into the oil and fry 2-3 minutes on both sides until golden brown.
Please note do not add more than 3 in a batch and don't put the gas flame. On low if oil temperature reduces the soya tikki Or cutlets will break.
