I believe this will work with all vegetables, including onions which I have tried. There are many vegetables I have not tried however, so there may be some exceptions.

Is it necessary to use airlock? And if so why?

I have made this without an airlock before, and it worked fine. It helps let out the gas. If you don't use an airlock, you need to open the lid once a day to let the gas out.

This flavor is not so easy to describe, but it is very rich, and also fermented tasting, something like saurkraut, with a mix of sour, tangy and salty vegetable flavors.
