2. Fermenting vegetables reveals flavors and textures that you can't experience otherwise
3. Shallots are delicious and I can't wait to add these to salads, as a garnish for steaks and burgers
Wild lacto-fermentation of bulb and root vegetables can be tricky due to the high sugar/carb content which tends to favor an alcohol fermentation over a lactobacillus fermentation. I'll post a follow-up video when they are done!
