Lauki(Bottle Gourd) Sambhar Recipe | Tasty South Indian Sambhar Recipe
Sorakkai Sambar, also known as Lauki Sambar or Bottle Gourd Sambar, is a traditional South Indian stew made with lentils and bottle gourd, flavored with tamarind and spices. It's a nutritious and versatile dish commonly served with rice or South Indian snacks like idli and dosa.
Sorakkai Sambar is not only delicious but also offers health benefits as bottle gourd is rich in vitamins B and C, sodium, iron, and potassium. It aids in maintaining heart health, lowering cholesterol levels, stabilizing blood sugar, and regulating blood pressure.
Ingredients:
1/4 cup toor dal (split pigeon peas)
1/2 medium(or 1 small) bottle gourd (lauki), peeled and diced
Tamarind -1 small lemon size - soak in warm water
Jaggery - 1 small lemon size/or 1 to 2 tbsp
Salt to taste
Turmeric powder - 1/2 tsp
Sambhar Masala
Tempering
Water as needed
For masala :
Fresh coconut - 3/4 cup
Kashmiri red chili (Eastern)- 3 (choose chili as per your spice level)
Urad dal (black gram)- 1tsp
Chena dal (Bengal gram)- 1tsp
Jeera/cumin seed - 1/2 tsp
Methi/Fenugreek seed - 1/4 tsp
Coriander seeds - 4 to 5 tsp
Hing/asefoetida(compound or powder) - pinch
Curry leaves - 5-6
Oil - 2tsp
Water for grinding
For tempering:
Mustard seeds - 1/2 tsp
Curry leaves - 10-15
Oil - 2tsp
