Surely many of us remember from our childhood the kind of dishes that our mother used to prepare after returning from school.
For us, one such dish is certainly lazy dumplings, and for some, lazy noodles. Of course, it's the same dish, and different names depending on the region we come from. Served with breadcrumbs but usually with cream and sugar.
Our today's vegan and gluten-free ones refer precisely to the latter version.

Ingredients:
200 g natural tofu
1/4 cup corn flour
1/2 cup potato flour
75 ml of lemon juice
1 heaping tablespoon of ground flaxseed
3/4 teaspoon salt
Cane sugar for sprinkling
Vegan cream to pour over ( recipe 333 )
Preparation:
Crush the tofu very thoroughly with a fork so that it has no lumps and stir in the lemon juice.
Mix the dry ingredients together, add to the tofu and knead the mixture. We set it aside for a while so that the flaxseed and flour absorb the moisture from the tofu and put the water to boil with the addition of salt.
Knead the dough again and add flour or water if necessary, depending on whether our tofu was drier or wetter.
The idea is to make the dough pliable. We divide it into two parts and, on a silicone mat, roll a roll out of each, which we then flatten slightly.
We cut the dough into about 2-3 centimeter pieces, which we drop into boiling water. Cook about 3 minutes after the noodles float to the surface of the water.
We put them on a plate, pour over the cream, in our case made from coconut yogurt with a few teaspoons of coconut milk. We sprinkle with sugar and we're done!
