Ingredients:
🥥 600 ml coconut milk
🌾 400 g flour
🍚 200 g of sugar
🫒 150 ml of oil
🌰 100 g of coconut
🥄 15 g baking powder
🍋 1 tablespoon of lemon essence

Instructions:
1. Preparing the cake:
🥣In a large bowl, combine 400g flour, 200g sugar, a spoonful of salt, 100g coconut, 15g baking powder.
🥄 Add 600ml coconut milk, 150ml oil, a spoonful of lemon essence and a spoonful of vanilla extract.
🥄 Mix well until you get a homogeneous composition, without lumps.
2. Baking the cake:
🔥 Preheat the oven to 180°C.
🍽️ Pour the mixture into a baking tray lined with baking paper, leveling it with a spatula.
⏲️ Bake the cake in the preheated oven for 40 minutes or until it passes the toothpick test.
3. Preparing the glaze and decorating:
🔥 Heat 500ml of coconut milk in a pot over low heat.
🍫 Add 240g dark chocolate with 50% cocoa broken into pieces and stir continuously until the chocolate melts and you get a homogeneous glaze.
🍽️ After the cake has cooled and been cut into equal parts, take each piece and pass it through the chocolate glaze so that it is completely covered.
🥥 Sprinkle 150g of coconut flakes. Then, immediately after brushing through the frosting, sprinkle the coconut flakes generously over the chocolate covered cake, pressing gently to adhere to the frosting.
🍽️Repeat these steps for each piece of cake.
4. Rest and serving:
⏱️ Let the cake rest at room temperature for a few hours or overnight.
