Pasta with pesto is a great classic of our tradition. If you like having fun in the kitchen and preparing your own homemade pesto, here is my reinterpretation of the Trapani pesto recipe.

Of course, the best known is Ligurian, and is the original recipe and Genoese pesto, which is made with fresh basil leaves, pine nuts, garlic, extra virgin olive oil and cheese, usually Parmigiano Reggiano. But our boot is full of variations and I was inspired by Trapani pesto, which instead of pine nuts includes almonds and an additional ingredient that is tomatoes, which I replaced with dried tomatoes in oil.
One thing is certain, a good fresh pesto is a creamy and tasty condiment to be used for pasta dishes or to flavor meat or fish dishes. For its flavor and its color it is the pride of our Mediterranean cuisine.
The result? As always, a simple, fast and cheap recipe with an appetizing appearance but which in terms of aroma and taste has nothing to envy to other more "gourmet" dishes.

02:12 Wash the fresh basil, dry it and peel it. Crumple the basil stalks and place them in a pan with plenty of extra virgin olive oil and a clove of garlic. When the oil is flavored, collect it in a bowl and let it cool
04:52 Put the basil leaves, a pinch of salt, the toasted almonds, the extra virgin olive oil, the dried tomatoes in oil and the goat cacioricotta into a cutter. Chop everything, adding the flavored oil a little at a time
