Ottawa is re-doing Valentine’s Day on March 14th which means you have T-17 days to learn how to make these warm and cozy Linzer Cookies!
But if you’re over all the love don’t worry, you can make these cookies for any occasion! All you have to do is find a small cookie cutter that fits your occasion and make a fun design on the top half of the cookie. You could also switch up the jam and bring some fun colours into the cookie mix!

❤️ Linzer Cookies
2 cups butter
⅔ cup sugar
4 eggs
2 tsp. vanilla
2 tsp. lemon zest
2 ½ cups ground almonds (almond flour works!)
2 tsp. baking powder
1 tsp. cinnamon
½ tsp. salt
4 cups flour

Icing sugar
🗺 Directions
In a stand mixer fitted with the paddle attachment, beat the butter. When fluffy, add the sugar, then the eggs one at a time, the vanilla, and the lemon zest.
In a separate bowl combine the ground almonds, baking powder, cinnamon, and salt. By hand, incorporate all the dry ingredients into the wet ingredients. Add the flour a little bit at a time. Keep kneading and adding flour until the dough reaches a semi-firm consistency. You should be able to mold the dough and have it hold its shape.
When the dough reaches the proper consistency, divide it into two disks and tightly wrap with seran wrap. Let the dough rest in the fridge for about 30 minutes.
Roll out the dough to about 0.5 centimeter. Cut the bases and tops of the cookies. Place on a baking sheet lined with parchment paper and bake for 10 to 15 minutes at 350°F.
Once the cookies have cooled, find their perfect match. Try and match each base and top so both cookies are similar in size.
Dust the top cookies with icing sugar.
Spread a small amount of jam on the bottom cookies and sandwich them together.
Let the cookies sit in the fridge to solidify and serve!

🌟 Review and Tips
When doubling the recipe, avoid doubling the cinnamon as it will change the color of the cookies.
If you don’t have a linzer cookie cutter use any circle cookie cutter (about 2 inches in diameter) for the base. Use that same cookie cutter for the top and any smaller cookie cutter for the design.
When placing the cookies on the baking sheet, avoid any creases in the parchment paper. You want the cookies to be as flat as possible.
Wait until the cookies are completely cooled to dust with icing sugar. If they are even a little warm the icing sugar will melt and clump.
